Baked Ziti I

Luckily I doubled this recipe for a crowd of 10 people. The two dishes were gone in no time. I was reluctant to use the sour cream as the recipe calls for because I've always made the traditional baked ziti with ricotta cheese. But, I did use the sour cream (the light version) and boy am I glad I did. This dish is delicious. I used one 26oz jar of marinara and a 29oz can of plain tomato sauce (because it tastes to fresh.) Sauteed fresh garlic with the onion & beef. Again, deeeelish!!!

Balsamic Roasted Pork Loin

I would have given this 5 stars but I think there is way too much oil. I'll make this again, for sure because it was delicious and everyone around the table raved about it. Next time I'll just cut the oil back to a 1/4 cup. Thanks for sharing this yummy recipe.

Apricot Oat Muffins

This is a good recipe and the taste is good, too. I did make some changes - just to try them. Instead of 2 c of ap flour I used 1 c of whole wheat and 1 c of oat flour; 1/3 c brown sugar and a little less than 1/4 c of coconut sugar (lower glycemic). I also sub'd applesauce for oil and dried cranberries & dried blueberries for apricots (only because I thought I had apricots but didn't). The texture was good, not rubbery. We made 12 reg size muffins and 16 mini muffins with one batch. Nice time I'll increase the spices. All in all, a nice healthy muffin. Thank you!

Eggs Benedict

Very good! Very easy! One note of advice, however....prepare the hollandaise sauce in advance but do not cook until everything is almost done. Well I had the water on a very low simmer the sauce started to solidify and I had to fix the consistency with extra water, which worked fine but lessened the favor a tad. But yummy regardless!
