This is a good recipe and the taste is good, too. I did make some changes - just to try them. Instead of 2 c of ap flour I used 1 c of whole wheat and 1 c of oat flour; 1/3 c brown sugar and a little less than 1/4 c of coconut sugar (lower glycemic). I also sub'd applesauce for oil and dried cranberries & dried blueberries for apricots (only because I thought I had apricots but didn't). The texture was good, not rubbery. We made 12 reg size muffins and 16 mini muffins with one batch. Nice time I'll increase the spices. All in all, a nice healthy muffin. Thank you!
