Take The Night Off Slow Cooker Pineapple Chicken
This was super easy and is now my "don't know what to cook tonight" go to dish. I use a larger can of pineapple so there is more juice to soak the rice in and I always use fresh ginger because its so much less expensive than ground ginger and gives a much stronger flavor. I also cut back on the brown sugar and I have a real sweet tooth so recipe is probably too sweet for most people as written. Basically, I now toss chicken, a large can of pineapple, lots of fresh ginger and some amount of the other stuff in the crock pot now and it comes out great.

Melt-In-Your-Mouth Meat Loaf
This was great! I've always had a hard time getting my meatloaf to hold together but this was nice and firm. My grocery store was out of hamburger so I combined a meatloaf mix of veal, pork and beef with ground chicken. Normally I'd never consider chicken for meatloaf but it was so good I think I'll pass on 100% beef in the future. I also used fresh sage since its taking over my little herb patch. There was a lot of liquid in the bottom so I just poured it out before adding the sauce. I'll be using the crock pot for meatloaf from here on out.
