Sweet and Sour Meatballs III

Delicious! I used frozen meatballs and followed the recipe exactly. It wasn't too sweet for us using the 1/2 cup brown sugar. Husband and stepson liked it too. I served it with rice and an asian veggie mix.

Rosemary Ranch Chicken Kabobs

These are excellent! Restaurant quality recipe. (I eve subbed dried for fresh rosemary.) I have made them twice in less than a week on my boyfriend's request. I marinated veggies (red potatoes, red onion, and green pepper) to go with them. We cooked them once on the grill and once under the broiler. I will make these again and again!!!

Tofu Creamed Spinach

This was a wonderful healthy recipe. I did use 3 packages of frozen spinach and a large onion instead of a small one. I used firm tofu. Hope it's as good leftover! This would definitely be good in a lasagna or some spinach enchiladas. After I eat part of the leftovers for lunch I will try it in one of those.

Bow Ties with Sausage, Tomatoes and Cream

This recipe was super easy and delicious! I did not add the fresh parsley because I didn't have any but I followed the rest of the recipe exactly. Next time I will try using half and half instead of heavy cream, and if it still turns out as good I will try the fat-free half and half to make it even healthier.

Chinese Cabbage Salad I

This recipe is fabulous! I did cut the sugar and oil down to 1/3 cup and I will probably use less cashews next time. It was so easy that I know I will make this again and again! I made it the night before to bring with me for lunch the following day - so I mixed the coleslaw mix, onions, and dressing together, and put the cashew/ramen mix in a baggie to add at the last minute so it would stay crunchy. Perfect!

Spicy Sausage Quiche

I used Rotel tomatoes instead of green chilies and jalapeno, and Jimmy Dean hot sausage instead of regular. It turned out great! I'm hoping it will be just as good reheated.

Southern Fried Cabbage

My boyfriend loved this recipe. It was my first time making fried cabbage - I never liked it as a kid. I loved it - I'll definitely use this recipe again. Next time I will probably use 2-3 more slices of bacon.

This is a wonderful, very rich cheesecake recipe. Very easy too! My boyfriend loved it as is, but next time I will try adding a bit of sugar - maybe 1/4 cup - I thought it could be a tad bit sweeter.

Angel Chicken Pasta

Fabulous! Easy, easy, easy meal! My boyfriend and I loved it! I doubled the sauce - except for the dry italian mix (just used one of those). It was the perfect amount for the 6 chicken breasts and 1 lb of penne pasta. I also subbed chicken broth for the wine. While the pasta was cooking, I sauteed some mushrooms in butter and served that on top. It was delicious - definitley restaurant quality! The sauce has such a wonderful flavor, and the color, due to the golden mushroom soup, is very appealing. I will make this again and again!

Corn Casserole II

This is the first dish to disappear at the Thanksgiving and Christmas table. A family favorite we make every holiday - the kids will eat this up! I use sharp cheddar, light sour cream, & only 1 stick of butter instead of 2.

Instant Pistachio Salad

My grandmother has made this every year for Thanksgiving and Christmas as long as I can remember. Everyone loves it, and it is always one of the first things to disappear! It has a sweet, unique flavor that you will crave. Super easy to make! I use sugar-free instant pistachio pudding mix instead of regular, and you can't tell the difference.

Seven Layer Tortilla Pie

OK, but why not just make a bean burrito with some of the same ingredients and save time? Also, a pie plate is way too short to hold all of the ingredients - I had to use 2 pie plates. If I do make this again, I will definitely add more ingredients to give it more flavor, and cut the recipe by half to make it fit in one pie plate. Otherwise, good idea...

Caesar Salad Supreme

I made this tonight for dinner, and WOW! Delicious!!! I even used light mayonnaise instead of regular. I used the leftover bread that I made last night for the croutons, which came from the "Best Bread Machine Bread" recipe here on allrecipes.com, and they were fantastic!!! I would recommend using more than 1/4 cup of olive oil to make the croutons though - 1/2 cup would have covered them better. I will also make chicken next time to make it a bit more healthy meal with the added protein. GREAT RECIPE!!! Thanks!

Baked Dijon Salmon

Easy and tasty! Not quite 5 stars. But because it is so simple, I would definitely make this again. It is just as good without the butter. In fact, the last few times I've made it all I've used is honey dijon sauce and chopped pecans, omitting everything else. I like it better that way, actually. I use this recipe at least once a week (usually more). It is simple enough to do when I'm cooking for just for me!!!
