Baked Garlic Parmesan Chicken

This came out really good. I know I should not rate it on my changes, but I did change it a bit. I marinated the chicken overnight in Italian salad dressing, but then breaded it according to the recipe and baked at 375. My chicken breasts were quite large, so they took about 50 minutes to cook, but were still extremely tender and juicy. Thanks for a great recipe that we can play with according to our own tastes.

Spicy Tuna and Tomato Sauce with Fettuccine

We liked this very much. I used a good quality jarred tuna in olive oil. I think it makes a difference. Honestly, I didn't think the combination of celery, peas, tuna and picante sauce would work, but they did. I did saute the celery in a little bit of olive oil first til tender, then added the peas and tuna and picante sauce. Tossed with the pasta and served with the parmesan on top.

Chicken Souvlaki Gyro Style

Very, very good. Only thing I did different and it was only because I did not get the time to marinate the chicken. So, seasoned the chicken breasts with a garlic seasoning, S&P, and grilled and then sliced and tossed with the marinade. A great solution should you find that you were not able to marinate the chicken ahead. Came out great this way too. Thanks for the wonderful recipe!

Basic Chicken Salad

Made this salad last night to take to work for lunch today. I did toast the almonds to give them some crunch and more flavor and also chopped them up a bit. Excellent salad - great on whole grain bread! Thank you for this recipe - this will be the only chicken salad I make from now on.

Springtime Spaghetti

We enjoyed this very much. Used olive oil instead of butter and two small zucchini and two small yellow squash. Other than those changes, we prepared the recipe as is, but with perhaps just a tad bit more parmesan cheese!! Thank you for a great recipe that we will do again and again. Plus, it's a quick to prepare dinner for a weeknight!

Pork Tenderloin with Creamy Dijon Sauce

Excellent recipe! Only thing I did different was to add the sour cream after it was done. I thought it might curdle after all that time in the heat. Came out perfect. Thank you for a great meal.

Father-in-Law's Scallops with Sun-Dried Tomatoes and Bacon

This was awesome. I pretty much followed the recipe exactly. Just delicious. I did increase the sauce ingredients a bit and it was perfect. Tossed the cooked pasta in the pan with the sauce and scallops. Will make this again. I also think you could do this delicious sauce with seared shrimp, or even chicken. Thank you for a fabulous dinner!

Bada Bing Pork Chops

Awesome pork chops. Marinated overnight, but left out the hot sauce - everything else the same. Our chops were on the thin side, so they got a little well-done on the grill, BUT they were still so tender and just delicious - what flavor!! The marinade is fabulous!!! We will be making this often. Thank you for an outstanding grilled pork chop recipe.

Fettuccine with Bacon-Clam Sauce

This was very good. I followed the recipe almost exactly, except I used a couple more bacon strips and added the drained clams at the last minute - they can get rubbery if cooked too long. All in all, a very satisfying dinner.

Mamma Rita's Eggs and Tomato Sauce

This was excellent. I did add a clove of crushed garlic to the pan before I put the tomatoes in. I did take the seeds out of the tomatoes first and there was still quite a bit of liquid that took more than 3-5 minutes to reduce. That said, it was just a wonderful meal. Thank you for this recipe! Oh, served it with toasted homemade country bread.

Broccoli with Garlic Butter and Cashews

Excellent recipe. I was low on soy sauce, so only used 2 tablespoons and it was perfect. I'm really not a huge broccoli fan, but this was probably the best broccoli dish I have ever had or made. I do agree with a couple of people that the sauce was a little thin - maybe a touch of cornstarch mixed with water to thicken just a bit to help it stick to the broccoli better. Cashews were fantastic in this. Thanks so much for this recipe!!!!!

Nutty Quick Bread

Nice, nice recipe. I love it that you get two loaves - one went into the freezer and we enjoyed the other loaf every morning lightly toasted and slathered with jam. Very good flavor and texture. Thank you so much for this wonderful recipe!

Slow Cooker Barbecue Beef

Really excellent recipe and very easy too. Followed the recipe exactly except I skipped the bouillon cubes and added a 1/4 cup beef broth, but that probably was not necessary as the roast made its own broth as it cooked all day. After about 7 hours in the slow cooker, my 3 pound roast was fork tender. Refrigerated overnight, skimmed off the fat the next day and then warmed everything up and loaded up some good rolls - fabulous. I did add some BBQ sauce too for added flavor. This makes plenty!!

Easy Vodka Sauce

I just wanted to say that this easy sauce is quite delicious - no changes need to be made to the original recipe either. My 94 year old Mom absolutely has to have a supply of this sauce in her house. If she runs out of it, my niece (who lives with her) has to make another batch. It's that good.

Pork Tenderloin in Bourbon

Really, really good. Marinated one pork tenderloin overnight, and cut into medallions. The marinade, reduced in the pan, after the pork came out, was fabuous. Great idea.

Plum Quick Bread

Wonderful, moist, tasty and easy to make. However, since it is February, I substituted granny smith apples and it was still wonderful. I did check the breads after 50 minutes in the oven and they were definitely done. I believe you could use any kind of in-season fruit in this and have success. This is really exceptional. How great that you even get two loaves out of the recipe! Thanks so much.

Broiled Tilapia Parmesan

Wow! I don't need to say much more. This is a superb recipe. Since I was only making the tilapia for two of us, I cut the recipe back a bit; boy did I wish I had more topping! Way to go Phoebe! Thanks.

Devil's Steak Sauce

Oh my. As a rule, I don't buy commercial steak sauces; just don't like them. After reading the reviews on this recipe, I prepared this sauce to go with two grilled steaks and I have to say that this is the BEST!! I am fortunate to have some homemade raspberry jam in my refrigerator. The combination of flavors is out of this world. This sauce is tangy, complex and complements everythig. I mean, we put it on our steaks, potatoes, grilled onions....Bernard, you have created a masterpiece. Thank you. I will be making this again and again and again. This deserves 10 stars! I still have some left - it's like a little jar of gold sitting in my refrigerator calling me......
