About this Cook
I moved to Canada with my Canadian fiancee at the fall of 2011. I currently work in construction, and mostly renovate bathrooms and basements. Decks in the summer. I am an Annoyingly (for others!) avid Liverpool F.C. fan and watch every game they play, and have since I was a young boy.
My favorite things to cook
Being an Englishman, I am very much into my home cooked foods, but as I was brought up eating many different nations meals I have broadened my palette. I am very keen on Jamie Olivers style of cooking. sometimes very complex but always with the home style he is awesome at. I have recently got into cooking curries, and have been perfecting a Vindaloo recipe I found in an old book. I'm starting to really find my way around the kitchen, although often my confidence gets the better of me and Carley, my fiancee has to put a brave face on. I find cooking to be a great stress reliever as it really has to be focused on to get it right, something which I love
My favorite family cooking traditions
My Mum was the cook in the house. She cooked at home from a very young age, before she had her own family. She cooked a lot of foreign foods which I guess everyone eats now. Bolognese, stroganoff, stir frys, roasts, etc. not complex things but food that was in good variety which was great as a child. it meant I grew up wanting to try more varieties.
My cooking triumphs
The first time I made the vindaloo. I could only get the spices in their original form. so i had to fry them first, and really make the whole thing from scratch. It was the first time I had made a curry and my audience where well travelled curry fans, one in particular and vindaloo fan. the pressure was on. I took all the ingrediants to the place we were eating, and forgot to bring the recipe. However as I started to cook it came back to me as i had gone over and over it. the curry went down a treat and that felt fantastic. that really got me into wanting to try more in the kitchen
My cooking tragedies
No great tragedies, however on a few occasions, I have messed up a recipe and had to adapt it into something else to save face. Only on one occasion have we binned the dinner and picked up the take away menu!

Loaded Chicken Carbonara
This was a really simple recipe and it was very rewarding. Loads of flavour. I used cut up leg meat. Like the idea of putting mushrooms in it. Thanks (Must stop eating it)
