Mimi's Zucchini Pie

I love this easy little recipe! I've made it so many times for breakfast, brunch, lunch or even a light dinner. I've made different variations depending on what I have on hand. I've made it with fresh or frozen veggies (zucchini, broccoli, cauliflower, baby carrots, spinach... ) some of the times I've added ham, green onions, fresh herbs like basil and shredded mozzarella on top. I've also made it with a few teaspoons of spaghetti or pizza sauce and every time it turns out delicious! I always add the Parmesan to the mix instead of on top and I make it with the "Biscuit Baking Mix" I found on this site. I also bake it in a square 8 in dish and it turns out great!

Oatmeal Raisin Cookies IV

What a great soft cookie! I used quick oats and substituted 1 cup of flour for whole wheat flour and they turned out great! I didn't use the pecans and thought the cookies were a little sweet for my taste. Next time I will try using a little less sugar and adding an extra cup of raisins. I also followed other reviewers suggestions of using 4 large eggs and mixing the dough by hand when adding the oats. For the other mixing steps I used my hand mixer and it went well. I baked them using parchment paper and let the cookies cool a little before removing to avoid breaking them. By dropping the dough in teaspoonfuls, this recipe yielded almost double the 36 servings indicated!

Grilled Bell Peppers with Goat Cheese

Wow! This is the first time I've ever felt compeled to write a review. These peppers were amazing and so easy to make! I didn't have any lemon pepper, so I put regular pepper and added the juice of a half lemon. Thanks for the great recipe!
