Winter Fruit Salad with Lemon Poppyseed Dressing

My family loves this salad! I first made it for a church thanksgiving potluck and my husband and son requested it for our own Thanksgiving meal. Also served it to company for a soup and salad meal and there were no leftovers! It makes a lot. One tip if you aren't serving right away: keep the diced fruit in a separate container and toss with a bit of lemon juice to keep from browning. Also I toasted and added pecans instead of cashews the first time because I had them on hand. Delicious!

Sweet Potato Casserole I

I like that this recipe makes an 8x8 casserole dish, and that it makes use of the canned sweet potatoes. It goes together very easy. I was able to make it the night before Thanksgiving and then just pop it in the oven. Nice crunchy topping, too!

Cheeseburger Soup I

Made this for dinner last night and it was delicious. Used shredded cheddar, about 3 cups of potatoes. Let out the sour cream, but added it to my own bowl. Yummy! Will opt for shortcuts next time - frozen hash browns, add flour to sautéing veggies to save time and fat content.

My Country Style Steak

A hit with the husband who went back for seconds! Served with hot buttered noodles. I added a cup of milk as others suggested, along with the water and a little extra flour. It was nice because my husband was late, but I could just let it keep simmering and get more tender. Ended up simmering for about an hour and a half with no problems. Will definitely have this again. Mashed potatoes next time!

Candied Bacon

This was a huge hit at our Super Bowl party - the guests didn't even wait till half-time, they just ate it as soon as I came in the door! I ran out of glaze, but just let it bake a few more minutes until it was nice and brown. Remove from the rack as soon as possible because it will stick. I did not have rice vinegar (forgot it on my list) so I substituted apple cider vinegar with favorable results. Also, putting parchment paper on my baking pan helped minimized the cleanup. A winner in our book and we will be making it again soon!

Refried Beans Without the Refry

These were very good. Next time I will cut back on the black pepper a little bit. Cooked them overnight on low and they were perfect. On the advise of others I cut the salt back to about 2 1/2 teaspoons and I thought that was just fine.

Mexican Rice II

Finally, rice that is not that soupy "Spanish rice"! My family thought this was quite tasty. The secret is toasting the rice in the oil first. Even though my husband was suspicious of the onions, he gave it the seal of approval. The recipe says it serves four and since I was having 9 guests for dinner, I doubled the recipe. That was not necessary, it would have served all of us and nice serving without doubling! UPDATE: I froze the leftover rice, kind of breaking it apart befo it froze completely. It was still delicious reheated and by keeping it from freezing in a lump we were able to reheat only what we needed. So doubling the recipe was actually an easy way to have this on hand to go with frozen burritos or quick quesadillas!

Easy Guacamole

This was perfect for spur of the moment guacamole. I substituted some garlic salt for the minced garlic and added half a jalapeño that I had leftover from Refried Beans Without the Refry. My family gobbled it up and we wished we had more! Next time we will add a bit of cilantro and see how that tastes.

Pesto Chicken Penne Casserole

My family loved this - even my hubby who is NOT a chicken/alfredo fan at all had two big helpings. My son said it tasted like something he would get at a restaurant. The only things I did different - I cooked the chicken breasts all day in my slow cooker so I shredded the chicken rather than cutting into cubes. I think that really helped it hold the sauce & cheeses. I don't care for crushed tomatoes so I used some that were diced and in garlic and olive oil (drained first). I used bow-tie pasta because I had it on hand. I planned to halve the pesto based on other reviews, but I forgot. However, my family thought it was just fine with the full 15 ounces. It made a large 9x13 baking dish full (like lasagna) so there were plenty of leftovers for everyone's lunches. This is a keeper!

Slow Cooker Apple Crisp

This was delicious! Made as directed but added about a cup of oatmeal as other suggested. Next time I think I will leave out the ground ginger because I really didn't care for the taste it added. That will make it 5 star in my book. It makes a lot of topping even in a large 6 quart slow cooker. Two hours on high and an hour on low with the lid crossways made a nice crispy topping. Can't wait to make again!

Authentic Louisiana Red Beans and Rice

My first try at Red Beans & Rice! My husband and son said this was fabulous. A little spicy for me, but I forgot to fix the cornbread that would have balanced it some. Added some diced ham slice that I had leftover & I thought it needed some salt. My husband wanted it to be more gravy-like so I added a little instant flour & water which thickened it perfectly. Makes a lot & I'm sure I'll be making again.

Bill's Sausage Gravy

This is a great basic sausage gravy recipe. One tip and time saver I learned from my dad. Don't bother to remove the sausage from the skillet. Just add the flour to it & the drippings. Cook for a few minutes till the flour browns and then add the milk. It will thicken just fine and saves time & cleanup!

Dee's Roast Pork for Tacos

Delicious. I think my family would like a bit more spice, but made delicious tacos. We topped with sour cream, pico de gallo, lettuce & cheese. My husband added mango peach salsa to his. Next time I might add a bit of cayenne to kick up the heat. My 16 year old son actually put this together & we cooked it in the crockpot on low for about 6 hours.

Tortilla Rollups II

Very quick & easy. I added chopped black olives becau I was trying to use up a bunch of them. I used mango peach salsa & that was yummy. Also used whipped cream cheese which made for very easy spreading, but they also got soft quickly. Next time I'll add taco seasoning for a bit more flavor & probably use reduced fat cream cheese instead of the whipped. They were totally devoured by our guests & I'll make again soon just for family!

Cheesy Hash Brown Bake

Very, very easy & very, very good. My family & guests loved it. I used I can cream of potato & one can cream of celery. I think cream of chicken would be good, too. I thawed the hash browns the day before & kept in the fridge overnight. Assembled all in the morning & cooked in the crockpot on Low for about 5 hours. Will definitely make again. Leftovers are good, too!

Berdean's Cube Steak

This was very, very tender & tasty. I used a can of beef broth instead of buillion granules. I would suggest cutting back on the oil, as it left quite a bit of grease on top of the sauce when it was done. My picky husband & teenage son loved it. I thickened the sauce for gravy & served over mashed potatoes.

Meatball Grinders with a Yummy Sauce

My family of guys loved this. It was super easy to make on the stovetop. I only used two jars of sauce since others said it was too much. Also, the meatballs came in a two pound bag, so that's what I put in. Next time, I'll use the three jars of sauce with two pounds of meatballs. Used the Italian meatballs & it was very good. This would be hard to mess up!

Pesto Pasta with Chicken

WOW! My first experience with pesto and also with sun-dried tomatoes was a good one. Everyone in my family loved this, even the picky teenage son and hubby who is not that big on chicken/pasta combinations. Was a breeze to put together & tasted like something you'd see demonstrated on TV. Classico prepared pesto was yummy & there's enough left to make another batch. I upped it to three chicken breasts because it didn't look like enough in the pan for 5 good servings. It probably would have been OK. I'm sure I can make again before too long!

Manicotti Italian Casserole

My family loved it. Maybe I'm slow since it was my first time to make it, but it took me much longer to get it all assembled & baked. I'll try again & see if I can speed it up. It definitely makes a huge amount. I filled a 9x13 glass dish AND an 8x8 one as well. You could easily cut it in half & still have plenty. Great with a green salad & garlic bread.
