Oatmeal Peanut Butter Cookies

I find I need to add A LOT more oatmeal to keep them together, like up to 3 cups. I also add a teaspoon of vanilla, and chocolate and butterscotch chips. Very good cookies!

Cinnamon, Spice and Everything Nice Cookies

I only use half of the ginger and nutmeg, otherwise, I think they are overpowering. I also refrigerate the dough before I scoop it and roll it in the sugar. They turn out great! Everyone at work loves them!
