Sunshine Juice

I have a juicer, but put this in a blender instead. 1) Bananas don't juice, and 2) raspberries get mostly shot into the disposal container on mine... Anyway, I had thought I had raspberries, but didn't so I used strawberries instead. Very good drink! I basically had it for lunch. The second time I made it (the next day!) I added a container of Greek strawberry yougurt too. Oh, and I had some pineapple juice on hand, so I used that to get the blender going instead of water or milk.

Tuna Noodle Casserole III

This was very good!! Next time I would either saute the celery ahead like one other reviewer said, or leave it out completely though. It was still pretty crunchy. I also cheated and bought the frozen peas and carrots medley instead of cutting raw carrots. I'll still definitely give it 5 stars. Mmmm...

Slow Cooker Carrot Cake Steel Cut Oats

Despite so many negative reviews, I tried this anyway. I'm happy I did. The only other time I've made steel cut oats was with a recipe from this site (http://allrecipes.com/recipe/slow-cooker-oats/detail.aspx). I compared the water called for in this recipe to the previous link, and the ratio of water to oats was much greater (probably why people were getting really watery oats.) Here's what I did that didn't really modify the recipe, and I was successful: I only made 1/2 a batch, so I started with 3 cups of water instead of 5. I could only find matchstick carrots at the store, so I put them in my food processor before adding to the crockpot (complaints about crunchy carrots in reviews). When they were done, the carrots were still pretty crunchy, but overnight in the fridge mellowed them out a bit before I had a bowl for breakfast. I checked on the oats hourly, and after about 4 hours I added 1 cup more water. They were done in about 5 hours... That's all I did and it worked great. Even though this is a slow cooker recipe, I still made sure I was home at night so I could check it... Now I know what works for my crockpot!

Beef and Bean Chimichangas

I thought these were pretty good and would give this a 4, and my husband loved it and said he would love to have it again! I used salsa because I didn't have taco sauce, and probably only used half of what was called for. We also had the lettuce and tomato but totally forgot to get it out when the chimis were finished cooking!!

Baked Kale Chips

First time attempting a recipe like this. I think we added waaaay too much oil and seasoned salt (we made some with sea salt too). They were drenched after being cooked. They did taste pretty good nonetheless. Will definitely cut down the oil and seasonings though.

Lemon-Orange Orange Roughy

I used cod since orange roughy is endangered. I looked up what else to use instead, and cod was one of the options. I'm not sure what I did wrong, but the favors just didn't taste that good. Maybe it was the fish itself, Idk. I won't make again.

Banana Pancakes I

Made these impulsively last night when I saw the recipe! They were delicious! I didn't use much syrup at all- they are so good they don't need it. The batter is a little more runny, so mine weren't perfect circles, but still tasted great. I might try to add a little more flour, or a tad less milk next time to see if it changes the taste too much.

Jumping Ginger Smoothie

This was actually a really good tasting drink! I'm not sure what it was about it, but it also had my dog following me around the house crying to have some haha! Perhaps it was the ginger root, I had never used it prior to making this!

Jalapeno Bread II

I don't have a bread machine, so I gave this recipe to a co-worker to try. He brought some in the next day and it was awesome. I picked out the big chunks of jalapeño since I don't like really hot stuff. Had a nice flavor throughout. UPDATE: I have since purchased my own bread machine (this recipe that I sampled having some influence on that decision) and made this myself. It turned out wonderfully and has been great for sandwiches!

Chef John's Caramel Apple Pie

I've made this recipe three times now, and all have yielded amazing results. Twice I doubled the recipe and made two pies to share with my Mom. I love the look of the golden lattice, and the sauce is delicious!

Stuffed Jalapeno Firecrackers

I made these tonight for my husband and he was raving about them and asking why we haven't made these sooner!! We didn't have actual Cajun seasoning so we used Chipotle seasoning instead. We also took the advice of another reviewer to use 350 degrees for about 30, then broiling for 5 more since we don't like our bacon burnt. We'll definitely be making these again! Thanks for the recipe.

I realized after I started making this recipe that I didn't have thyme... So a quick Google search said basil was something I could use instead. These had an awesome sizzling sound when they were cooking in the oven, and tasted great!

Johnsonville® Italian Sausage Lasagna

This was my first time making lasagna, and I made it exactly as written. I even found "Italian-style" shredded mozzarella cheese. Leftovers are a struggle in my house, but this actually got eaten up within a couple days! Thanks for the great recipe.

Aunt Norma's Rhubarb Muffins

First time I've ever tried rhubarb, and this looked like a fairly simple recipe to start with. It was pretty easy to make, and the muffins are delicious!! My husband's first rhubarb experience as well, and I'm happy to say he likes them too!. Bought too much from the farmer's market, so debating whether to make more of these and freeze them, or try a different recipe :)

Raspberry Marinade

I've never made a marinade before, but this was great! I actually made kabobs instead of the whole chicken breasts. I cut up the chicken in the morning before work, and made dinner that night, so probably marinaded about 11 hours. I didn't know what rice vinegar was, but saw in reviews that others used cider vinegar, so I substituted that. I also cut back the soy sauce to 1/3 cup. The chicken had great flavor, was super moist, and smelled great while it was cooking on the grill!!

Grilled Cod

I don't care for spicy, so I omitted the Cajun seasoning and used some mango-lime seasoning I had. Also used chopped yellow onion since I didn't have any green onion on hand. To season the fillets before hitting the grill, I melted a tiny bit of butter and rubbed in on with my fingers, then sprinkled the seasoning on. It was soooo delicious! Will definitely make again, thank you!!
