Jalapeno Bread II

I don't have a bread machine, so I gave this recipe to a co-worker to try. He brought some in the next day and it was awesome. I picked out the big chunks of jalapeño since I don't like really hot stuff. Had a nice flavor throughout. UPDATE: I have since purchased my own bread machine (this recipe that I sampled having some influence on that decision) and made this myself. It turned out wonderfully and has been great for sandwiches!

Lemon-Orange Orange Roughy

I used cod since orange roughy is endangered. I looked up what else to use instead, and cod was one of the options. I'm not sure what I did wrong, but the favors just didn't taste that good. Maybe it was the fish itself, Idk. I won't make again.

Tuna Noodle Casserole III

This was very good!! Next time I would either saute the celery ahead like one other reviewer said, or leave it out completely though. It was still pretty crunchy. I also cheated and bought the frozen peas and carrots medley instead of cutting raw carrots. I'll still definitely give it 5 stars. Mmmm...

Braided Easter Egg Bread

I was pretty nervous to try this recipe, as I had never made homemade bread before. However, it turned out WONDERFULLY! It was extremely soft on the inside, and nicely browned on the outside. I took this to the office since my husband and I couldn't eat it all ourselves, and everyone loved it. I'll be bringing this to my family's Easter dinner in the future!! Thank you marbalet!

French Toast I

I had just made a white cake, so I had 4 egg yolks that I didn't want to go to waste. I had some french bread on hand too, and decided to try this recipe. I left the 4 yolks and didn't add any more eggs. It turned out excellent! I also found out that I was out of vanilla after I already mixed everything else together, and it was still very good. Definitely a keeper! :)

Oatmeal Waffles

Made these this morning, as I am looking for more ways to incorporate oatmeal into our diet. I halved the recipe, otherwise followed it to a T. They were great!! Will definitely be making again and again :)

Whole Wheat Blueberry Muffins

I did a double batch/experiment with this one. I made two batches, one with blueberries and one with raspberries. All I had on hand were frozen, but I think fresh would have been much better (not as much liquid?). I'll have to try it. Also, I only have 2 muffin pans, so I made half of each flavor as regular size, and half as mini-muffins. Some of the mini raspberry ones were a little more difficult to get out of the pan, but not horrible. Both turned out very moist and delicious. I'm trying to make different types of muffins to have on hand for a quick breakfast, and I think this recipe would be great for just that. It seems that it'll be very easy to just alternate different fruits.

Coffee Cooler

Made this yesterday morning for my husband and I. It didn't have much coffee flavor, maybe I need to make the coffee much stronger. Overall it was good, but not as great as I had expected. Still a nice change in the rotation of breakfast shakes we sometimes have.

Mom's Zucchini Bread

Well, I think this one may have been a chef-error, so I'm giving it 4 stars instead of the 2-3 I was thinking originally. I grated my zucchini with my mandolin slicer, and had a little more than 2 cups, so I just added it. Very wet bread that didn't seem to ever fully finish cooking. I left it in the oven for about 75-80 min total, and the middle still didn't cook. It tasted ok. If I make again, I'll not add the little extra zucchini.

Shrimp Quesadillas

I used taco seasoning instead of the cumin and chili powder. It turned out great! The only other modification I made was to leave the jalapenos out of mine since I can't handle the heat. Would definitely make again!

Seminary Muffins

Delicious!! Looking for differnt muffin recipes because I'm trying to have muffins on hand for quick and easy breakfast on the go. This definitely will be in my rotation. I made the recipe almost exactly as written, with the exception of leaving out the nuts. I made half without chocolate chips, and both versions were very good. I think some of the other reviewers said this would be easily adapted to different flavors, and I would have to agree.

Baked Kale Chips

First time attempting a recipe like this. I think we added waaaay too much oil and seasoned salt (we made some with sea salt too). They were drenched after being cooked. They did taste pretty good nonetheless. Will definitely cut down the oil and seasonings though.

Best Friend Doggie Biscuits

I've made these 4 times now. I do make a couple modifications as follows: -I use oatmeal instead of cornmeal (because I've read that corn isn't the greatest for dogs) -I omit the salt (no need for added salt) -I use 2tsp peanut butter in place of the parsley (1, because I never have parsley on hand, and 2, because my puppy LOVES peanut butter) They have turned out amazing every time, and my Cocker Spaniel doesn't take his eyes off of me when I'm making them. Oh, one time I added a small amount of Bacon Bits. Ironically he didn't like those as much as the plain ones.

Chef John's Pumpkin Pancakes

I have only ever made homemade pancakes once (the Fluffy Pancakes recipe from this site) and these sounded really good. I didn't have any lemon juice on hand, and I've never used lemon zest before, so I decided to try the recipe first this morning without going to the store. They turned out great! It was only after we ate them and I was putting the rest of the pumpkin into tupperware that I realized I had used Pumpkin Pie Mix (pumpkin with spices already added) instead. I saw some reviewers said it had too much spice, but even after my error of using the spiced pumpkin and adding all the spices as written, I didn't feel it was too strong. Thanks for a great recipe. I will definitely be buying some lemon juice and lemon zest to try again soon!

Easy Roasted Red Pepper Hummus

I couldn't find tahini at the store I went to, and didn't feel like making another stop. Other reviewers said they left it out and it was fine, so I did as well. Likely because of omitting the tahini, it was a little on the runny side, but it still tasted really good and had a decent texture. Next time I will plan ahead and look for tahini to see if it makes a difference.

Mango Quesadillas

The flavor was really good, and would have been even better if we had a riper mango. I didn't add the cayenne or the chili pepper because I can't handle the heat lol. We used pinto beans instead of black beans as well.
