Blueberry Cream Muffins
Absolutely *the best* muffins we have ever tasted! I thought I'd never get rid of 24 muffins, but they were so good they disappeared in just days. Soft, moist and deliciously tangy. They have a wonderfully smooth texture. Added an additional 1/2 tsp of baking soda to help them rise. We made them again and split the batch substituting a cup of mini chocolate chips for the berries (LOL, for the kids) in half and lemon juice/zest and poppy seeds in the other half. They turned out beautifully, the recipe is very forgiving. I think we'll try orange-cranberry next, this is our new favorite muffin recipe!

Rigatoni with Pizza Accents
This was pretty good, *definitely* a kid pleaser. The only thing we changed was after making the sauce and noodles, we mixed it all together and baked it in a lazagna pan with mozzarella and parmesan cheses on top. It adds about 15 minutes to the prep/cook time, but is well worth it. Not the healthiest dish in the world, but a great substitution for the friday night pizza!

Homemade Peanut Butter Cups
Awful, awful, awful! What a disappointment! The filling in this recipe was so gross, it had a horrible, grainy texture... not at all like a peanut butter cup should be. I followed the directions exactly, don't know where I went wrong. The idea was so cute, too... we really wanted this to work out.
