Carrot Cake III
This cake has a good flavor and texture. The icing is really very good and has a full rich flavor - but it is creamcheese!! I omit the nuts from the icing as I loosely ground them up and press them into the sides - it looks really pretty. You can also put a marzipan carrot on the top, or white chocolate shavings, or both - it really dresses this cake up to look very classy. Also, I recommend baking this cake as two layers and icing the middle, and then the whole cake - put some nuts in the middle layer, and it's quite impressive when cut. I followed the advice of some of the other reviewers and used half applesauce, half oil, but I think you should use a little more oil than half as this cake was a little dry using half and half - but it could have been that I cooked the cake in layers and misjudged the oven temp. Very good recipe to try though - not too expensive, and definitely cheaper than a bakery, while it looks and tastes just as good.

California Bean Dip
This is a very good recipe, it's unusual, and definitely a winner! I did alter the recipe a little and took the advice of some other reviewers and added a touch of sour cream - definitely gave it alot of body and fullness to the flavor. I used Kens' lite ranch which was really good, and not as heavy tasting as the regular ranch. I added some taco hot sauce, some green peppers, canned mexicorn, some cheese, and I also used a zesty italian dressing for a kick. Additionally I used some cajun seasoning for a bit of warmth and alot of seasonings. It was very funky tasting, and it is now on my husbands list of favorite dips....oh, and try eating this with ritz crackers - I think it's better than tortilla chips!

Bramblewood Blackberry Pie
I signed up just so I could review this recipe..... I'm sorry, but it was quite awful. The pie crust was light, but it had no flavor and was very bland. It was missing something. Also, it is more than crumbly when you mix it, I had to use pieces and push it into the pie crust - it would not roll at all, it just fell apart......consider using a VERY high quality oil and flour as this is what people will taste. Berry mix inside the pie was non-interesting, although it held together nicely. I would recommend adding more sugar, or trying to make the crust with butter and sugar, which I plan to try after I've picked more berries - all and all - if you have a FREE supply of berries to waste, then try this recipe, otherwise, just make a pie crust and save yourself the disappointment.
