Easy Lemon Cookies

I've made these so many times, my husband LOVES them. I even brought them to a work potluck and everybody raved about them! I've also tried the chocolate version which is good, almost tastes like brownies. I just used devil's food cake and chocolate extract, add some chocolate chips, and instead of rolling in powdered sugar roll in regular granulated sugar. Yum!

Healthy Pumpkin Cranberry Muffins

These are yummy! Only changes I made were to use all whole wheat flour, and instead of the dried cranberries, I added some chopped walnuts. These are great with breakfast, and I love that they are low calorie (I calculated 135 calories each with my changes). Will make these again and again!! Also, I only baked 18 minutes, and they were perfect, any longer and they might have been dry. Could be because my oven runs a tiny bit hot though!

Butter Chickpea Curry

I was looking for a a good, simple vegetable curry/korma recipe after having it for the first time on a cruise ship and falling in love with it. I decided to try this recipe as I had most of the ingredients on hand, and I just adjusted it to what I had. I omitted the garam masala and ground ginger as I did not have any and instead added extra curry powder, I only used 2 potatoes, and added half a can of canned carrots and a small can of peas. It was SO DELICIOUS over rice, I will definitely be making this again!!

Dad's Leftover Turkey Pot Pie

YUMMMM!! I made this the lazy way, by spreading the filling in a casserole dish, and topping with crescent biscuits in the last 12 minutes of baking. Otherwise I made this exactly as written, and everyone loved it! Will definitely make this again!

Crab Salad

This was pretty good! I'm not a crab person, but I had some imitation crab in my fridge that needed to be used up. I made as written except I added a little bit of minced garlic and salt, and I ate it warm on toast. I don't know if I would go out and buy imitation crab just to make this, but if I find myself needing to use up some again in the future, I'll use it this way!

Easy Cornish Hens

This was a pretty good recipe. I used 3 game hens, and adjusted the ingredients accordingly. Also added some baby carrots, and a chopped onion. They did come out of the crock pot super tender! But I think 8 hours on low was a little too long, they were done by around 6 hours (maybe because mine were partially thawed?). I then put them in the broiler for about 5 minutes to brown the skin, and it very good.

Harvest Pumpkin Cupcakes

I made a double batch of these for a Thanksgiving party at work. The frosting was delicious, but I found the cupcakes to be rather dry. The oil in them soaked through the cupcake liners and onto the box I transported them in, so this could be why. But I've never had this problem with cupcakes before so I don't know why they did that. Might use a different cake recipe next time, but I'll use the frosting recipe again!

Mrs. Sigg's Snickerdoodles

So, I made this recipe exactly as written, except I halved everything. I thought 48 cookies was waaaay too many for just my husband and I. The dough was really crumbly and kind of dry, and in order to make half the amount (24 cookies) I had to make the balls really tiny! and then, they didn't flatten out, so we had "snickerdoodle balls". They tasted really good, but were dry. My husband still liked them and ate most of them, but I was a little dissapointed, . Perhaps halving the recipe threw it off? Not sure, but I'll probably try this again, making the full recipe and bigger cookies.
