Yogurt Chocolate Chip Cookies

Not crazy about the taste of shortening. There is no way I could have dropped the dough from a spoon, it was very stiff so I rolled it in balls and flattened slightly. Baked 9 minutes, my cookies were quite hard. I would try these again w/all butter or butter/coconut oil combination and perhaps reduce the flour by a few TBSP. I like to have a few eggless recipes around for a nephew who is allergic, most eggless cookies have tons of butter so I do like the idea of yogurt in place of eggs.

Chocolate Applesauce Cake III

Nice and moist but almost no flavor. It didn't taste of applesauce and aside from the chocolate chips on top there was no discernable chocolate flavor, even after 24 hours. I was sure I could improve upon the recipe so made it a 2nd time (lots of applesauce to use up at my house!)using half a cup of cocoa instead of 2 TBSP (and reducing the flour by 6 TSBP)but it was still very bland. It's as if both the applesauce and cocoa obliterate each other.

Turkish Red Lentil 'Bride' Soup

Nice, filling soup with great flavour. I found 2 tsp of dried mint was enough, perhaps my mint was particularly pungent? I squeezed a bit of lemon juice into the soup rather than put lemon slices on top. My kids definitely did not like the look of this soup (colour and texture) but loved the taste so I would suggest lots of garnish if your family tends to judge food by appearance.

Orange Spice Garbanzo Cake

Very nice flavour,hard to believe there is no flour. Best eaten the day it's baked. Mine was completely baked in 40 minutes. I would definitely recommend lining the bottom of the pan w/parchment, I used a well-buttered non-stick pan and the cake was a bit difficult to remove intact.

Beef Mushroom Barley Soup

My husband loved this, my kids are mushroom haters (sigh) so had sandwiches for dinner - their loss. I made this using Better Than Bouillon and olive oil. Perfect.

Jennah's Famous Peanut Butter Blossoms

I'm not a fan of PB cookies but my family liked these - they say the cookies taste better the day after baking. I was worried the natural peanut butter I used might do something strange to the dough but it was fine. I don't usually have baking mix or Hersheys Kisses around the house so don't know if I'll be making these again anytime soon but if you have absolutely no time to bake and need to produce something in a hurry these are quick and easy.

Mujaddara Arabic Lentil Rice

This recipe is a keeper, my family loved it and it is even better the next day. I used Spanish Pardina lentils, basmati rice, yellow onions. I dry-toasted the cumin in a small skillet beforehand as I think it tastes nasty otherwise. I didn't add the salt until step 2 and, because the lentils had absorbed almost all the water after 20 minutes, I added an extra half cup of water with the rice. I sauteed the onions in 2 T of olive oil, they took about 20 minutes to carmelize. As suggested by other reviewers I added a good pinch of allspice and cinnamon.

Vegan Black Bean Soup

Not a soup I will make again. Apart from draining/rinsing the beans (are we supposed to use them with the liquid? Did YCHRISTINE just assume we would do the usual drain and rinse?)I made the recipe as written and found the end result fairly tasteless. I then added another 14 oz of crushed tomatoes, a bit more veg broth, fresh lemon juice, dried oregano and a handful of fresh parsley which made the soup a bit more palatable but a different recipe altogether. On the plus side, this recipe is economical and can feed a lot of people.

Cabbage-Carrot Casserole

I'll make this again, it's quick to prepare and a good dish for a light, meatless supper. My vegetables cooked in 10 minutes, I used 1 tsp of Better than Bouillon in place of stock cubes. I made the sauce w/1 TBSP each of olive oil and butter, before baking I sprinkled the top with a few TBSP of panko crumbs that had been mixed with a drizzle of olive oil. I baked the casserole in a 7X11 pyrex dish for just under 20 minutes. Make sure you drain the cabbage and carrots really well before placing in the baking dish as they hold a lot of water. I put mine in a large wire strainer and pressed out any remaining liquid with the back of a serving spoon.

Easy Quiche

I made 2 of these, one with ham and broccoli, one w/spinach and no ham. I was short of butter so used just 2 T, melted, in each. It was fine and I would use that reduced amount next time. I used 2% milk and a bit of 18% cream that I had in the fridge. Really nice quick meal with easy-to-vary ingredients. I wouldn't call this a quiche but it is a good dish in its own right.

Apple Pie Filling

For my 1st attempt, I scaled the recipe down to 8 servings. It worked well however for my 2nd attempt, using the full recipe, I did cut back slightly on the sugar, cornstarch and water to suit my personal preferences. I had never seen a homemade apple pie filling recipe so thanks for this Terri, I didn't realize how easy it was! I froze mine in 20 oz portions to use in Allie's Awesome Easy Spice Cake - great cake but I don't like the additives and glucose-fructose in commercial fillings.

Jamaican Spinach Soup

This is such a flavorful, quick soup, I know I will make it often. I was too lazy to make a veg. stock so used chicken stock I had in the freezer. The ginger is subtle but gives a wonderful warmth. My family is never too impressed with zucchini unless it's in a cake but they all loved this soup.

Orange Apricot Loaf

I made this to serve at a brunch as a not-too-sweet addition to the bread tray. Everyone liked it. I didn't get 1 TBSP of zest from my small orange so added a bit of natural orange extract to the batter to bump up the orange flavor. I used more apricots so also added an extra splash of o.juice. My loaf needed 50 minutes in the oven. As an alternative, next time I will increase the butter by 2-3 TBSP to keep it moist, maybe add some Cointreau to the dried fruit and o.j. mixture, possibly increase the sugar slightly to make it more of a cake rather than a loaf

Baked Beef Stew

I had 3 lbs of beef so adjusted the recipe accordingly and baked in a 9x13 roaster. No instant tapioca so stirred in cornstarch/water near the end, used Better than Boullion rather than granules. I don't think the sugar was necessary, I did need to add more water as the stew baked, more tomatoes would have been a good idea. I've never baked a stew before, it's great if you can't be bothered babysitting it on the stove, so thanks for this recipe Diane. I have since tried a few of my own versions, my favorite so far: sauteed the veg first, didn't brown the meat (to my surprise,I couldn't tell the difference), more tomatoes, combo of ale and water for the liquid, seasoned w/thyme, bay leaves, steak seasoning, uncovered the stew for the last half hour.

RISI E BISI, a quick and simple soup.(rice and pea soup)

This was great. It is quick, easy Italian comfort food. For some reason my grandmother's risi e bisi has never turned out for me but this recipe worked like a charm. I used 2 TBSP of olive oil to saute then finished the dish with butter. Perfetto.

Avocado Smoothie

This is wonderful. I don't buy flavored yogurt so used a full-fat plain yogurt and added vanilla extract. I did add extra avocado as I blended, the smoothie didn't seem to have much of an avocado taste otherwise, perhaps the original recipe was tested with a super-sized avocado? As with most smoothies, you can adjust the milk and yogurt to obtain your desired consistency.

Allie's Awesome Easy Spice Cake

This is a quick, easy cake with great flavour. Reduced the sugar slightly as I poured a brown sugar glaze on top after baking. I used a non-stick bundt pan and the cake did stick even though I cooled it thoroughly in the pan as instructed - next time I will flour the pan after greasing.

South African Malvapoeding (Marshmallow Pudding)

I'd heard of this pudding from S. African friends so thought I'd give it a try. I used my usual substitute for cake flour: reduce all-purpose by 2 T. per cup, add an equivalent amount of corn starch. I did find the vinegar curdled the milk mixture while heating, in future I'd either add it when it comes off the stove or use buttermilk. No apricot jelly so I used raspberry. My pudding tested done after 35 minutes, probably because I used a slightly bigger dish than specified. I used orange juice in the sauce, it curdled straight away although I don't think that matters. After soaking,the pudding was slightly drier in the middle. If I made this again I would like to do what a previous reviewer suggests and pour some of the sauce mixture over the pudding half way through baking. My family liked the pudding warm, I prefer it cool. Thx for an interesting recipe.
