Jamaican Spinach Soup

This is such a flavorful, quick soup, I know I will make it often. I was too lazy to make a veg. stock so used chicken stock I had in the freezer. The ginger is subtle but gives a wonderful warmth. My family is never too impressed with zucchini unless it's in a cake but they all loved this soup.

Orange Apricot Loaf

I made this to serve at a brunch as a not-too-sweet addition to the bread tray. Everyone liked it. I didn't get 1 TBSP of zest from my small orange so added a bit of natural orange extract to the batter to bump up the orange flavor. I used more apricots so also added an extra splash of o.juice. My loaf needed 50 minutes in the oven. As an alternative, next time I will increase the butter by 2-3 TBSP to keep it moist, maybe add some Cointreau to the dried fruit and o.j. mixture, possibly increase the sugar slightly to make it more of a cake rather than a loaf

Baked Beef Stew

I had 3 lbs of beef so adjusted the recipe accordingly and baked in a 9x13 roaster. No instant tapioca so stirred in cornstarch/water near the end, used Better than Boullion rather than granules. I don't think the sugar was necessary, I did need to add more water as the stew baked, more tomatoes would have been a good idea. I've never baked a stew before, it's great if you can't be bothered babysitting it on the stove, so thanks for this recipe Diane. I have since tried a few of my own versions, my favorite so far: sauteed the veg first, didn't brown the meat (to my surprise,I couldn't tell the difference), more tomatoes, combo of ale and water for the liquid, seasoned w/thyme, bay leaves, steak seasoning, uncovered the stew for the last half hour.

Milly's Oatmeal Brownies

Nice flavor however they are very dry. I baked them 20 minutes, the brownies were slightly underdone in the center of the pan when I removed them from the oven.

RISI E BISI, a quick and simple soup.(rice and pea soup)

This was great. It is quick, easy Italian comfort food. For some reason my grandmother's risi e bisi has never turned out for me but this recipe worked like a charm. I used 2 TBSP of olive oil to saute then finished the dish with butter. Perfetto.

Avocado Smoothie

This is wonderful. I don't buy flavored yogurt so used a full-fat plain yogurt and added vanilla extract. I did add extra avocado as I blended, the smoothie didn't seem to have much of an avocado taste otherwise, perhaps the original recipe was tested with a super-sized avocado? As with most smoothies, you can adjust the milk and yogurt to obtain your desired consistency.

Allie's Awesome Easy Spice Cake

This is a quick, easy cake with great flavour. Reduced the sugar slightly as I poured a brown sugar glaze on top after baking. I used a non-stick bundt pan and the cake did stick even though I cooled it thoroughly in the pan as instructed - next time I will flour the pan after greasing.

South African Malvapoeding (Marshmallow Pudding)

I'd heard of this pudding from S. African friends so thought I'd give it a try. I used my usual substitute for cake flour: reduce all-purpose by 2 T. per cup, add an equivalent amount of corn starch. I did find the vinegar curdled the milk mixture while heating, in future I'd either add it when it comes off the stove or use buttermilk. No apricot jelly so I used raspberry. My pudding tested done after 35 minutes, probably because I used a slightly bigger dish than specified. I used orange juice in the sauce, it curdled straight away although I don't think that matters. After soaking,the pudding was slightly drier in the middle. If I made this again I would like to do what a previous reviewer suggests and pour some of the sauce mixture over the pudding half way through baking. My family liked the pudding warm, I prefer it cool. Thx for an interesting recipe.

Spicy Tuna Fish Cakes

I wanted to like this recipe because I usually enjoy fish cakes but these are lacking....something. I found them to be bland and a tad mushy inside, I even gave them some extra time to crisp and firm up properly. I'm not sure where I went wrong, perhaps it has something to do with the texture of my mashed potatoes? The seasoning definitely needs to be bumped up, imo.

Mie Goreng - Indonesian Fried Noodles

This is a quick, plentiful meal. I used 10 oz Chinese thin egg noodles and slightly more vegetables. The chicken was slightly bland, next time I might try marinating it in some of the soy/oyster/kecap manis before cooking.

Creamy Italian White Bean Soup

I am always happy to find quick, healthy recipes like this. I used olive oil for flavor, more thyme and garlic,low-sodium organic chicken broth. The soup was a tad thin for my liking however it did thicken up when stored in the fridge overnight.

Deep Dark Old Recipe Bran Muffins

These were just what I was looking for, I used to make a similar muffin but misplaced the recipe. I don't have veg. shortening so used a combination of safflower and coconut oils - I poured in a quarter cup before I realized my mistake, no harm done as far as I can tell. Great recipe, thanks!

Addictive Sweet Potato Burritos

These are okay, the bean mixture definitely needs to be highly seasoned to balance out the sw.potatoes and, oddly enough, the mustard is a nice touch (I used grainy). I'm not a fan of kidney beans so used canned romanos and added the chili powder and cumin while sauteeing the onions as I don't like the harsh taste of those spices mixed straight into food.

Serbian Ground Beef, Veggie, and Potato Bake

The meat mixture is so nicely seasoned, it tasted great, however as a whole this dish was not a success for me. The potatoes needed seasoning and would have looked and tasted better if the top layer was browned towards the end of the cooking time. The casserole itself crumbled all over our plates, I think it needs something to bind it together but I'm not sure what...

Eggnog Pancakes

Mother's Applesauce Cake

Although the icing is great the cake was heavy, bland and we could taste the baking soda. I was thinking of ways to tweak the recipe - reduce the b.soda, add some b. powder, reduce the flour by a half cup etc. - but I think I will just choose a different appplesauce cake recipe next time.

Pull-Apart Easter Blossom Bread

It's long past Easter but I couldn't resist this recipe. It's adorable and the dough is a dream to work with, I will use it for other shaped breads. I only have traditonal yeast so proofed with some of the warmed milk and made the dough using the standard method. There were no lemons in the house so I added a TBSP of vanilla to the dough and made the icing w/heavy cream and vanilla. After shaping I put the pans in the fridge overnight then let them come to room temp and rise before baking the next a.m. (took approx 2 hours). The photos were a great help, thanks for adding them. Two minor issues: IMO the dough needs more salt, I would increase to 1.5 or 2 tsp. The bread did dry out fairly quickly, I would try reducing the bake time by a couple of minutes next time.

Sweet Russian Cabbage Soup

Everyone loved this, it was a great meal for a windy rainy night. I did halve the sugar and increase the vinegar, used extra lean beef, Better Than Bouillon in place of cubes (better flavor imo) and a very small cabbage which was sliced instead of wedged. I really loved the quick prep for this recipe.

Vegetarian Moussaka

My new favorite recipe, 5 stars even though I think the instructions to brown the veg in a frying pan are off base as that would take forever. I roasted them on 2 large sheets in a very hot convection oven - the potatoes took a bit longer than the rest. The recipe is easily varied, I've added tons more zucchini (why do I plant so much?) as well as extra potatoes. The leftovers are wonderful.

Roasted Okra

I am an okra novice as it's not widely grown or eaten here. I did cut my okra in larger pieces and halved the salt It was a nice side dish.
