Jamaican Spinach Soup
This is such a flavorful, quick soup, I know I will make it often. I was too lazy to make a veg. stock so used chicken stock I had in the freezer. The ginger is subtle but gives a wonderful warmth. My family is never too impressed with zucchini unless it's in a cake but they all loved this soup.

Orange Apricot Loaf
I made this to serve at a brunch as a not-too-sweet addition to the bread tray. Everyone liked it. I didn't get 1 TBSP of zest from my small orange so added a bit of natural orange extract to the batter to bump up the orange flavor. I used more apricots so also added an extra splash of o.juice. My loaf needed 50 minutes in the oven. As an alternative, next time I will increase the butter by 2-3 TBSP to keep it moist, maybe add some Cointreau to the dried fruit and o.j. mixture, possibly increase the sugar slightly to make it more of a cake rather than a loaf

Baked Beef Stew
I had 3 lbs of beef so adjusted the recipe accordingly and baked in a 9x13 roaster. No instant tapioca so stirred in cornstarch/water near the end, used Better than Boullion rather than granules. I don't think the sugar was necessary, I did need to add more water as the stew baked, more tomatoes would have been a good idea. I've never baked a stew before, it's great if you can't be bothered babysitting it on the stove, so thanks for this recipe Diane. I have since tried a few of my own versions, my favorite so far: sauteed the veg first, didn't brown the meat (to my surprise,I couldn't tell the difference), more tomatoes, combo of ale and water for the liquid, seasoned w/thyme, bay leaves, steak seasoning, uncovered the stew for the last half hour.
