Arancini

Reviewed: Aug. 1, 2003
Pretty good. I have eaten these with a meat center. I mixed ground beef with peas and mozzarella and put it in the center of the ball. You only need small amount. Eat these hot, with marinara sauce! This is a day long process, so block out some time to make these. Worth it though!

Wonderful! They rose nice and high. Thanks to the person who posted the mixture for if you didn't have self rising flour.

Marble Swirl Pound Cake

Reviewed: May 13, 2007
This got rave reviews on Mothers day. I thought it was still a little dry. I followed the recommendations of some others to cut the flour by 1/2 cup, and to cook it for 50 minutes.

Caramelized Oatmeal Raisin Muffins

Reviewed: Apr. 18, 2005
I really liked this! I put in one apple, cored and sliced. I just made sure I coated the apple with flour. I also ended up using 3 packages of instant oatmeal (I realized too late it was all I had) It turned out dense and very sweet. Oh, I also used 1 cup of vanilla soy milk instead of evaporated. Perfect for the breakfast on the go!

Grandma Johnson's Scones

Reviewed: Jul. 25, 2003
Very tasty and moist. I left out the tartar, I didn't have any around. It was rather dry and crumbly, it made it difficult to mix in the fresh blueberries I used without squashing them. Turned out nicely though!

Very good, basic recipe! I was sneaky, and put a few tablespoons of shredded zucchini in, and no one was the wiser!

Very good! Very versatile recipe. I added parmesean/romano cheese instead of the feta, and it came out just as good.

Baked Dijon Salmon

Reviewed: Mar. 30, 2009
This is one of my favorite ways to have salmon! I don't add the butter, it works just as well without it. I also used Panko break crumbs, it added a great texture.

Flatlander Chili

Came out really well. It was a great balance of flavor's, except that it tasted a bit to tomatoey, so I added another tablespoon of chili powder. Everyone loved it! I also add sausage to the mix.

Christmas Breakfast Sausage Casserole

Reviewed: Dec. 24, 2007
I make this for every before school breakfast, the teachers LOVE it! I get rave reviews! I sometimes substitute half of the milk with creme. I also make a veggie version, with Rotel brand tomatoes and green chili's (spicy), and spinach, instead of the meat. Great for those vegetarians out there, and it adds great flavor!

Pretty Chicken Marinade

Reviewed: May 13, 2007
The chicken did look pretty! I only had 1/2 cup of soy sauce, and I still thought it was a bit too salty. I also did not have any liquid smoke. I still thought it was very good though! I would make it again.

Easy Focaccia

Reviewed: Jul. 25, 2003
This bread is really good. I didn't use rosemary, I used basil, oregano, and fresh garlic. I also used romano on the top, it has a better flavor than parmasean. I mixed a bit of the basil oregano and garlic into the bread at the end, it turned out very nicely. The garlic on the top roasted very well! I left the water in during baking, and this bread freezes very well.
