For the amount of fat and calories that are in this recipe, we found it to be quite bland. If I'm going to eat comfort food I want to really enjoy it, this just left me saying "eh".

Boilermaker Tailgate Chili

Good recipe if you are looking for a regular/traditional chili (traditional in the midwest at least). There is no need for the beef bullion cubes, basically just adding lots of unnecessary sodium to an already heavily spiced/seasoned recipe. Also skipped the bacon bits as there is plenty of meat and they tend to just get soggy in chili anyways.

Black-Eyed Pea Gumbo

We are meat eaters but try to incorporate vegetarian meals into our diet frequently. This is a fantastic recipe to accomplish this with. Incredibly healthy, gets protein from the black eyed peas and plenty of vegetables with very little fat. All of that said, it still turns out very tasty and can actually make you forget that you're not eating a traditional meat heavy gumbo...almost.

Chicken Florentine Casserole

This recipe is a nice starting idea, but I rated it poorly due to the number of things I had to/chose to change. 1. Made the recipe healthier by only using 1/8 cup butter, 1% milk instead of half and half and only 1 cup of mozzarella cheese on top. You still end up with a nice creamy sauce and it is plenty of cheese. 2. Used 2 - 10 oz. packages frozen spinach, it gets lots of spinach into the recipe and is cheaper than the fresh spinach...it gets cooked down anyways. Also used 8 oz. mushrooms because that's the amount that usually comes in a package. 3. Used 6 chicken breasts instead of 4. 4. Made the prep process much easier. Saute the mushrooms in butter, mix in spinach until heated through, layer on bottom of baking dish, arrange chicken on top, cover with sauce, bake for 30 minutes, top with cheese, bake for additional 10 minutes, top with real crumbled bacon before serving. The chicken was properly cooked through.

Garlic Chicken

A little on the bland side. If you coat both sides of the chicken and put in a baking dish you end up with one side just being a soggy mess. You need to bake on some sort of wire rack to allow both sides to end up with the nice crispy coating. Otherwise you might as well only coat one side and save the calories.

Baked Ziti I

This recipe is just ok when, it's needs some changes. Using jars of spaghetti sauce and ground beef ends up making a very bland meat sauce, making a homemade meat sauce with italian sausage would be much better. We were also not a fan of the sour cream. I don't think using ricotta cheese would make this dry like some have stated. Garlic should be added instead of just onion. Lots of room for improvement in this one.

Very good recipe when you want a quick and easy dessert. My wife heated the frosting in the microwave and it poured right over the top, much easier than trying to spread it with a knife.

Brown Sugar Smokies

Pretty good. Baking on a baking sheet the bacon gets soggy on one side. I would recommend baking them on a wire rack so they don't sit in the grease the entire time they cook.

Awesome Slow Cooker Pot Roast

This turned out great. I even had to substitute one can of cream of chicken soup because I only had one cream of mushroom, you couldn't notice once it was all done. I did 4 hours on high and it turned out perfect...and that was with 6 pounds of meat. I thickened the gravy with cornstarch/water, but that was only because I like mine thick.

Stuffed Peppers with Turkey and Vegetables

Ok, but I wouldn't make it again. We found the pepper's themselves to detract from the filling. We also didn't find it necessary to add peppers to a filling that was being stuffed in a pepper.
