Cranberry Orange Cookies

Have been making these cookies for years! I usually add a more orange juice and for extra flavour, I throw in a dash of either Gran Marnier or Triple Sec. Another reviewer used OJ concentrate and this is also good. I usually chop frozen cranberries and lightly coat them with a little sugar for those who don't like the tart taste. Haven't tried these with chocolate chips yet.

Feta Artichoke Dip

I've made this three times ! Last night,however, realized that I didn't have any feta so I substituted goat cheese and it was supburb. Also threw in some chopped HOT marinated chili peppers. WOW!! The dish was gone within the hour!!

Cilantro Chicken Burgers with Avocado

Good recipe!! I substituted fresh garlic & ginger as it give a better flavour. Garlic powder tends to smell nasty & strong. Also, I used more chopped Cilantro. Very good!

Broccoli Slaw

I have made this on several occasions and by adding some fried bacon bits, sunflower seeds and a simple home made vinaigrette it is great. The bacon when combined with the raisins really explodes in flavour.

Vincenza's Pasta Sauce

Excellent!! Please remember to throw in some red wine and chopped garlic with some Italian parsley about half an hour before sauce is finished. Then cool/and or re-heat the next day. You can "eyeball" a lot of this...fresh basil is best, and again left until the last 30 minutes.

Devil Dan's Fruit-Stuffed Boneless Turkey

I had a similar dish a few years ago at an upscale Washington DC party. When I made this, the butcher de-boned the turkey. I also used apricots and prunes which were a great addition and flavour booster. Threw in some Port wine with cider AND used fresh sage because it pairs well with celery. Also used Italian Pannetone bread, however, I think that any good fruit bread will do the trick. If you use good day-old rustic Italian bread, just throw in more fruit. I also threw in some Port wine!!! This recipe is flexible and NOT difficult yet delivers great flavour. Don't be too concerned about using the "exact" measurements...go with your heart on this one!!

Waistline-Friendly Turkey Chili

Ground turkey is by far more flavourful then ground beef. However, dried coriander does not come close to freshly chopped coriander and added towards the end, which really intensifies the flavour. Like another reviewer mentioned, if you don't have Chipole barbecue sauce you can always subsitute a few chopped Chipoles. This is a great recipe!

Caramel Apple Pork Chops

This is a great recipe. The second time I made it, after cooking chops, I then sauteed chopped onions in butter with brown sugar and added a couple tbsp of balsamic vinegar for about 20 minutes. Then added chops then apples on top...it was nothing short of amazing. Also added some dried sage/savory/oregano. This was from Gourmet magazine. Devine!

Grandma Augusta's Spaghetti Sauce

This recipe is good, however, it is better if a mixture of ground veal and pork/Italian sausage were incorporated with the beef. Ground beef/hamburger does NOT impart the same flavour and this mixutre gives the sauce a richer flavour. Rather than dried basil, throw in a handful of fresh basil about 30 minutes before the sauce is finished with fresh garlic and red wine. This I learned while attending an Italian cooking class.

Orange Herb Roasted Chicken

I've made this before and found the results were much better when the softened butter was combined with the herbs and then rubbed under the skin. This way the herb/butter flavour permeated the meat and it was fabulous!!!

I used real bacon, made my own bread crumbs from Italian bread, then added chopped green onions (scallions). I also added a pinch of oregano and thyme and that did the trick!!

Oregon Salmon Patties

This recipe was pretty good. To make the flavour of the salmon stand out, I used some grated lemon rind and added a dash of lemon pepper and oregano. Savory is also a nice touch if you have some.
