Overnight Apple Cinnamon French Toast

Reviewed: Mar. 19, 2005
I made this for a church breakfast - YUM. This is a keeper. Per a previous review, I did add some chopped pecans on top on the apples before pressing the bread down (by the way, I could only fit 18 slices -- 3 rows of six slices), and I added some chopped pecans on top. I was worried about inverting the pan - but it was a breeze.

Skillet Chops with Mushroom Gravy

Reviewed: Mar. 19, 2005
I don't like mushrooms, so I substitued cream of celery soup. Afterwards I found cream of onion soup. I will try that next time. Chops were fork tender and delicious!

Herbed Pork and Apples

Reviewed: Mar. 19, 2005
I'm giving this recipe 5 stars, although I wasn't thrilled with the gravy - too thin and too sweet. But the rub - Yumm. I've made this several times. I usually made the gravy as suggested and then add a jar of Pork Gravy Mix or Heinz Pork Gravy to it to "tame" and thicken it.

Christmas Breakfast Sausage Casserole

Reviewed: Mar. 19, 2005
I made this for a church breakfast. Everyone loved it. I had read all the previous reviews and here's what I did: I used the Jimmy Dean Maple Sausage, and sauted one small diced onion with it. I also used the Thomas' English Muffin bread instead of white bread. I doubled the recipe, but tripled the eggs. It made enough for one 9x13 pan and one 8x8 pan. (I know the "single" recipe says one 9x13 pan, but previous posts said it was too "flat". Doubling it as mentioned made it beautiful. Leftovers were microwaved, and also came out great -- definately a keeper.
