Baking Nana's Disappearing Focaccia

OMG...so good..I let my bread machine do the mixing. I added more herbs(chopped chives and chopped basil) and minced garlic(I love garlic). It is truly magic as it disappeared really fast!!!! Thanks Baking Nana :)

Fat Free Tartar Sauce

Nice alternative to store bought tartar sauce and without the guilt indeed. Tasted it and felt it needed something. Added fresh dill and 2 cloves minced garlic to perk up the flavour . This made it a 5 star with us.

Irish Soda Bread I

So good and very easy recipe. Batter was a bit dry so I added about 3 tablespoons of milk. I also baked it in a bread pan. Will make again but will add bit more raisins next time.

Kickin' Collard Greens

These were quick and simple to make but....did not like the bacon too much. Next Time I will omit this step and add a bit of balsamic vinegar to heighten flavour. Husband liked it .

Braised Balsamic Chicken

OMG!!!! I am making this as I am typing this review. Smells wonderful. And tastes even better. Made as is and is great. No changes needed. As a side I am serving linguini with pesto sauce and sauted broccoli. Can't wait for dinner.

Baked Haddock

Loved this recipe. Parmesean cheese gave it a nice twist. My kids love cheese , so this was a hit with them and they hate fish :) So easy to make. Made a nice greek salad and rice pilaf to with the haddock. Loved it!!!!

Spinach and Mushroom Frittata

This was a great easy recipe for lunch. Like other reviewers, I too sauted the onions and mushrooms first before combining the ingredients. Came out so tasty. My picky eaters ate it up and wanted seconds. Will definately make again.

Italian Wedding Soup I

So wonderfull. Made ths today as it was a rainy day. Only change was I subbed spinach as I did not have escarole on hand. Still deliscious. Froze the leftovers. Looking foward to eating the leftovers at future lunches.

Vegetarian Chickpea Sandwich Filling

Very good alternative for sandwiches. I subbed fat free mayo for regular. After tasting it , I then added papricka and cut up a small sweet onion finely. Much better flavour. Overall a good recipe. Also ate in a pita pocket with lettuce.

If I could give this recipe more stars I would. Made for the 1st baseball game of the season and got rave reviews. So good with mustard. Just like pretzels at the ballpark :)))

Panettone II

This was a good loaf. Did not taste like panettone. Rose so high it hit the top of the bread machine. Next time I will use less yeast only 1 1/2tsp and add more vanilla extract and will add some almond extract and more dried fruit. Could use more sugar as well. Upddate: made this bread again today. This time reduced yeast to 1 1/2 tsp, upped the sugar to 1/4 cup, reduced the salt to 1 tsp. Added 2 tsp vanilla and almond extract. Added 1 cup mixed fruit(golden raisins and mixed dried peel). These changes now make it a 5 star authentic Italian panettone. Spoken by a 100% Italian person.

Lemon Cake Roll

This is the same recipe that my mom gave me, only she made it with ice cream filling, or raspberry jam. So easy and can be frozen for a quick desert for unexpected guests. My kids love it.
