Ricotta Spaghetti

Wow...my mom used to make this pasta dish only she used elbow macaroni or small tube pasta. Delish. I sauted the garlic in olive oil as I don't like it raw. Adds more flavour. Brings back childhood memories. This dish is meant to be simple and not overpowering . So if you like your pasta more spicy or kicked up , this is not the recipe for you.I made it for my picky kids and they had seconds.

Classic Banana Bread

Very nice banana bread recipe. I added 1tsp vanilla and 1 tsp cinnimon as I always add these to banana bread.Adds a nice flavour. I would use less sugar next time and I subbed chocolate chips for the nuts(allergies).One problem with this recipe is the bake time. Way off. I had to cook mine for 1 hour and 45 min. At 1 hour it was still completely raw in the centre.

Cinnamon Raisin Bread II

Making this raisin bread strained and overheated my breadmaker. Much too dense a dough. Too much flour and not enough liquid. Had to remove from my breadmaker and knead by hand(something I hate doing) . More liquid(water) fixed the issue. Taste was good. Next time I would increase the liquid content by 1/2 cup which should solve the problem.

Made this as is...great.It is the exact same recipe as in my Pastene Italian Cookbook. Only they use cremini or button mushrooms.

Chocolate Chip Banana Muffins

Delish..I subbed light sour cream for yogurt(did not have any),used brown sugar instead of white. Turned ot very well .Kids loved them for school.

Classic Pot Roast

Wonderful flavour...but I added more seasonings as I though it needed spices. Added 1tsp oregano, I tsp basil, 1 tsp paprika, 1 tsp garlic powder, 1tsp pepper .Also used beef broth instead of water. 5 stars with these additions. I was looking for a basic recipe to add my touches to and this one is it. Everyone loved it and DH is looking forward to tomorrow's lunch at work.

Baking Nana's Disappearing Focaccia

OMG...so good..I let my bread machine do the mixing. I added more herbs(chopped chives and chopped basil) and minced garlic(I love garlic). It is truly magic as it disappeared really fast!!!! Thanks Baking Nana :)

Fat Free Tartar Sauce

Nice alternative to store bought tartar sauce and without the guilt indeed. Tasted it and felt it needed something. Added fresh dill and 2 cloves minced garlic to perk up the flavour . This made it a 5 star with us.

These were quick and simple to make but....did not like the bacon too much. Next Time I will omit this step and add a bit of balsamic vinegar to heighten flavour. Husband liked it .

Braised Balsamic Chicken

OMG!!!! I am making this as I am typing this review. Smells wonderful. And tastes even better. Made as is and is great. No changes needed. As a side I am serving linguini with pesto sauce and sauted broccoli. Can't wait for dinner.

Baked Haddock

Loved this recipe. Parmesean cheese gave it a nice twist. My kids love cheese , so this was a hit with them and they hate fish :) So easy to make. Made a nice greek salad and rice pilaf to with the haddock. Loved it!!!!

Spinach and Mushroom Frittata

This was a great easy recipe for lunch. Like other reviewers, I too sauted the onions and mushrooms first before combining the ingredients. Came out so tasty. My picky eaters ate it up and wanted seconds. Will definately make again.
