Abby's Chicken Rollatini

Really great. Seasoned the meat a bit before I filled and rolled them and added a small piece of mozarrela to the top as well. I added a little pesto to mine and my hubbys but left the kids without.

Candied Yams

Been making these since I was a kid and they are great, especially with the young set. Just a couple of tips: yes drain them, lighlty mashing makes them easier to serve more people ( We like them mashed more with butter for a creamier texture), we add cinammon and a dash of nutmeg-cook them to heat through on the stove top, then add them to the pan and top with marshmallows, just baking till they are nicely browned. You can also add coarsely chopped nuts like pecans before baking. Hope that helps some folks! :)

Sorry, I hate to rate something low but I felt this recipe was very bland. I also had to add a lot of liquid to get it to the right consistency for pouring.

Baked Pork Chops I

My family really enjoyed this recipe. As others have said, I reduced the cooking time to 1 hour total or it would have been over cooked. I also added some seasoning to the "gravy" mixture (Greek mix). I will definitely make this again, thanks!

After-Thanksgiving Turkey Soup

My family loves this soup! We have made it three years in a row now. The only thing I do differently is to ad a bit less flour and I use a Greek seasoning. We like our soup very well seasoned. An excellent way for us to use the dark meat we usually don't enjoy!

Lemon Butter Chicken

I made this recipe for the family tonight and it was easy and yummy! My son, Hubby and Niece's boyfriend all had seconds...give it a try. Only change, marinated the chicken in the dressing for 20 minutes before following the resipe to a T. Thanks for the recipe!

Famous Pork Chops

We really liked this recipe. I did use extra spices and gave the chops a light coating of flour (also seasoned)before dipping and dredging them in the crackers. I took others' advice and took off the foil for the last few minutes. These were tasty and tender!

Italian Sausage Jambalaya

Easy, easy, easy! My 18 year old niece and I made this together trying to create a meal out of the slim pickins' in the cuboard. I didn't add the okra (didn't have it) but did add a can of beans. Everyone loved it and it sure didn't taste like an end of the month, scrape it together dinner! Thanks, this is a keeper in our house!

Perfect Rib Roast

I gave this 5 stars because it was so easy. To be honest, I used a variety of herbs, because that's what I had in the pantry(Italian mix-rosemary, thyme, oregano) plus garlic salt, paprika, pepper and a dousing of worcestishire, like another reviwer sugested. It came out perfectly and the herb mixture couting the outside was heavenly. I used the same mixture on some new potatos and roasted them while the roast rested...a perfect and easy meal. Thanks a lot for the recipe, I am no longer afraid I'll ruin a good roast!

Cranberry Pumpkin Muffins

I think these taste great, however, I had a bit of trouble with the temp on the oven. I had to bake the muffins longer to cook through and therefore, they got browner than I'ld like. Might be a problem with my oven, but next time, I'm going to lower the temp to 375 and cook longer. I added Chocolate chips, a little more spice and used canned cranberries and they tasted great! Thanks for the yummy recipe.

Pumpkin Pancakes

My kids really liked these and each rated it 4 and a half stars. I rate it at 4 because they took an awfully long time to cook through. Spreading them with a spoon does cut down cooking time but also fluffines. Still, very tasty!

Broiled Tilapia Parmesan

This is a great recipe, easy and tasty! I actually used Mahi as it's my favorite. This was my first time preparing fish and it turned out great! Hubby loved it and my 11 and 9 year olds ate it too. I doubled the "sauce" and used light mayo for last 3 T. and used garlic salt instead of celery. Turned out really well. (we do like things salty though, so take that into account) Another tip, the rice I served with it took longer than I realized, so I took the fish out and had to wait 15 minutes...just waited for the last step of putting on the sauce and finishing. Thanks for the wonderful recipe!

Delicious and Easy Mock Risotto

Easy and my 8 year old daughter loved it! I made it as written and my daughter and I really enjoyed it, then I reheated the leftovers with cream and about 1/2 cup parmesan cheese along with some herb sauce mix from the gravy section of our local grocer. Hubby loved the leftovers! Is it risotto? No, but it was good and easy as stated. It is a little "creamier" if you Overcook the orzo (usually served a bit al dente) a bit. Well, we liked it anyhow!

Chocolate Cakes with Liquid Centers

This was really good! The only thing I did differently was to start with semi-sweet chocolate chips because that is what I had on hand and actually cooked for 9 minutes. Served with vanilla ice-cream, which actually levelled out the sweetness. My daughter(8) was upset she couldn't finish it all..but her brother helped her out! 5 stars because it was just so darned easy and just as good as the one at our local restaraunt! I even did all the mixing with a fork..no mixer! Thanks for this recipe, I've been looking for it for a while!

Chewy Chocolate Chip Oatmeal Cookies

Okay my 8 year old and I just made these cookies and they were awesome, perfecect, good, super-wondeful(her words)! They were really easy and came out soft and chewy. They look a little underdone when they are ready...but trust the timing, to keep them chewy you can't overcook them! Thanks for the great recipe!

Butternut Squash Casserole

This was very easy to make and my kids loved it. My husband even liked it (he hates pumpkin), perhaps because of the pineapple. I had to add extra pineapple for my kids. Texture a bit stringy, I may puree next time. Thanks!

Mom's Zucchini Bread

Stuffed Zucchini I

I made this recipe with a 5 POUND zucc i grew in my garden. My sister came over and everyone enjoyed it very much. We followed the recipe, adding a bit here and there to account for the size of the veggie. It was easy to alter for amount, we didnt even really measure...other than to be sure we used at least what was in the recipe and roughly double for the size. We did add sausage for my hubby and everyone was pleased. We also sprinkled cheddar and bread crumbs on the top to give it a yummy crunchy coating, but the recipe was great as it stood! Thanks!
