Beetnik Cake

Family LOVED this recipe. It was a big hit topped with cream cheese icing and chopped cherries. Changes: I only had canned beets so I put them into my chopper and let them pureé. To get 2 cups I used 2-15oz cans and drained them first. I used splenda to replace the sugar and next time I make this I think I will replace the oil with applesauce. I made the sheet cake in a 9X13 but I will try the cupcakes for lunchboxes!! What a great use of pineapple and beets!!

Baked Oatmeal I

I made this with 4C of oatmeal and 3 eggs. To this I added 2 diced peeled chopped apples. I did not add the sugar I added splenda/equal to eliminate the sugar but keep the sweet taste!!

Tantalizingly Tangy Meatloaf

I couldn't take a picture because it DID NOT LAST that long! I forgot to put the Worcestershire sauce in the meat so I added it to the glaze. I used pineapple toppping (leftover from ice cream)and this was the BEST MEATLOAF EVER. I did change the base becuase I just made my own typical meatloaf. I CAN'T BELIEVE HOW GOOD THIS WAS

Four-Bean Taco Chili

Leftover Chili can be used to make a great dip. Or you can serve the chili and take 4C out to make this dip on the side for guests. I added 4 cups of taco chili to a brick of velveeta cheese and melted it in the microwave. Serve this with tortilla chips and enjoy! I found one of my guests actually licking out the bowl, so I guess that means 5*

Light Spinach Frittata with Tomato Salsa

I added 5 fresh mushrooms and 2 artichoke hearts to FRESH spinach to the pan, in place of the frozen spinach. I topped with Queso Blanco instead of Mozzarella Cheese because Queso Blanco has a bit more flavor. This was perfect! Wonderful taste and a nice breakfast change!

Cube Steak Parmesan

Rich and Delicious Banana Bread

I made this and added vanilla and cinnamon it was delicious. I tried one loaf and made 2 more! I was so happy becuase I had no eggs and about 9 bananas I had to use up! Perfect solution!
