Well, what about me :) I've been cooking for a as long as I can remember. I was always in the kitchen with my mother as a child, and when I'm home, it's the exact same. I learned most of my cooking knowledge from my mother.

Every Christmas Eve my family gets together to eat and do a gift exchange. The meal consists of wonderful appetizers - all of mine come from this website!
My cooking tragedies
I made a shepard's pie once that was horrible! That was the first and probably last time I make that dish :)

Cha Cha's White Chicken Chili
This was so easy and delicous not to mention relatively low fat! I made a few revisions - I used a rotisserie chicken and shredded the meat, two cans of white beans and one cup of Trader Joe's frozen roasted corn, two cans of chilis and no jalepenos as I didn't want it too spicy. I left out the cayanne pepper as well but added a few shakes of chili powder. I also made a fat free crema to dollop on top - one small container of plain fat free greek yogurt, juice of 1/2 lime, a few sprinkles of cumin and chopped fresh cilantro. So good! I will be making this a lot in the cold months.

Super Summer Salsa
This is such a good and simple recipe. I use frozen roasted corn from Trader Joe's instead of canned corn. It has a wonderfully smokey flavor. I used a bit of splenda instead of sugar, added red pepper flakes and a bit of cumin. So easy to throw together and serve with tortilla chips!!

Mexican Chicken Corn Chowder
This is one of my favorite soup recipes. It's super easy to throw together. I made changes based upon what I had on hand and it's pretty low fat. I used ground chicken instead of chicken breast, chicken stock instead of bullion and water, fat free half and half, about 1/2 bag of Trader Joe's roasted corn (this is what made the soup amazing) instead of creamed corn, no cumin as I didn't have any and about 1 cup of salsa instead of tomato since I didn't have one. I've done it with the cheese and without and it's good either way.
