Roquefort Pear Salad

This salad is amazing! I almost didn't carmelize the pecans because I thought it might be too sweet, but I'm glad I did because it was perfect. I'm already looking forward to eating the salad for lunch tomorrow.

Garlic Red Potatoes

Great potatoes! I used half the butter and a half a large lemon. I used 4 medium sized red potatoes (Not sure if it was 2 pounds) and cut them up into about 1/4 inch thick and about 1 inch wide pieces, and they took about one hour to cook at 350, although I did have other things in the oven also.

Smushed Apples and Sweet Potatoes

This was fantastic! I microwaved the sweet potatoes (mine took 12 minutes for two large potatoes) as suggested by another reviewer, which sped things up considerably. I sliced the apples thin and made sure I covered the pan, but they still took longer than suggested in the recipe (maybe 10 minutes). The recipe tasted great, but really didn't look appetizing. I was just cooking for myself and my husband, so I put our servings in ramekins, added brown sugar and walnuts to the top, and broiled until the sugar was carmalized. They were much prettier that way, and tasty! In the future I may reduce the sugar used (and my sugary topping) to make it healthier. I think you could reduce the sugar by at least half without doing major damage to the flavor. All in all, i think this is a fast, easy (especially if you microwave the sweet potatoes), healthier alternative to sweet potato casserole. We'll definitely be making this again!

Maple-Glazed Pork Chops

These were fantastic! My husband said this was the best pork chop I've ever made. I followed the directions exactly, except I used lite maple syrup and lite margarine. I was a little worried that I wouldn't like the glaze, especially after I tasted it. It had a very tangy taste I didn't care for. I was dead wrong. It tastes great on the pork chops. It's a wonderful combination, and I can't imagine how fantastic it would've been had I used real maple syrup. It's a litte bit of work, but worth it!

Brown Sugar Meatloaf

I'm not normally a big meatloaf fan, but this was great! I used BBQ sauce because I didn't have ketchup and heavy cream b/c I was out of milk (and only 1/4 cup). I accidentally forgot the onion and added about a tbsp of worchestshire to the meat mixture. I put it in muffin tins and cooked for 45 min. I added the brown sugar/BBQ sauce mixture to both the bottom and top of each meatloaf "muffin", though I would recommend waiting until the last 15 min or so for the sauce on top otherwise it goes everywhere. I would also recommend putting a cookies sheet below the muffin tin in the oven if you go this route to catch any grease. I will definitely make this again!

Catherine's Spicy Chicken Soup

Unbelievably tasty and pretty healthy too! I realized at the last second that I was out of chicken boullion, but it still turned out great without it. I also did not add the sour cream, and next time I won't use the whole tomatoes - I don't see the point of them really. I made a huge batch and froze it in individual containers to bring to work, and it works out great! I just take each portion out of the freezer a night or two before and stick it in the refrigerator...an easy and healthy workday lunch! If I want to indulge a little, I throw some sour cream, cheddar cheese, and crushed fritos on top. I'm so glad I found this recipe! Thanks!!!

Blueberry Breakfast Sauce

This was fantastic. I added a layer of this to the Easy Cream Cheese Danish recipe on this site and it was incredible. I used fresh blueberries. I still have plenty left over and I look forward to using it in my yogurt and pancakes.

Eggplant Parmesan II

This is a wonderful recipe! It's fast, tasty, and healthy. Now I look forward to getting eggplant in my foodshare! My boyfriend balked at the idea of eggplant, but he loves this recipe. I usually just make one eggplant for just two of us and serve it over pasta. There's usually at least a lunch leftover, depending on the size of the eggplant and/or how hungry we are.

Delicious Ham and Potato Soup

This was FANTASTIC! I know this will become a regular in my house - and I will probably always make potato soup like this from now on. It turns out to be the perfect consistency. I made some small changes. I omitted the celery (had none) and added celery seed instead. I added the bouillon at the very beginning and used 1 cup half and half in place of 1 cup of the milk. Yum! Next time I'll double it.

Chocolate Crinkles III

These were awesome! I was looking for something right away, so I froze the batter while I preheated the oven, and made one batch (effectively half) on a cookie sheet. Those were okay, but not very chocolately. The 2nd batch froze for an extra 15 mins while the 1st batch cooked. I put the second batch in a muffin tins, just rolling the balls pretty big and putting one in each muffin cup. I was vigilant not to overcook them (I cooked the cookie sheet batch for 10 minutes, but it was too long), I cooked them for about 13-15 minutes in my oven, although it's hard to tell b/c I kept checking on them. I learned that they puff up a little when they are done. They were awesome! Fudgy and perfect. Next time I might add chocolate chips or maybe a mini peanut butter cup in the middle of the muffin cup before i bake.

Easy Cream Cheese Danish

This was absolutely delicious, even better than I expected. I had a bunch of fresh blueberries from my share so I added layer of Blueberry Breakfast Sauce from this site to the filling. I halved the recipe, using only one can of crescent dough and 3/4 package of cream cheese; and there was plenty of filling. I didn't bother with the topping because this was just for me and my boyfriend, and the danish was great (and sweet enough) as is. I loved this and I know I will make it again and again! I might even try making individual blueberry and cream cheese danishes using the method suggested by other reviewers. Natalie thanks for posting this!

Chicken Wellington Casserole

Delicious! A lot better than I thought. I thought the cream cheese would be overpowering, but the mushrooms and crescent roll crust mellowed it a bit. Some Disclaimers: It's very rich, and you HAVE to love cream cheese or you will find it disgusting. Plus, it's definitely not diet food.

Peach Crisp III

Very delicious! I cut down this recipe to two servings and put it in ramekins instead of a baking dish. I also used a combination of white and regular fresh peaches (highly recommended!) and didn't use nutmeg (since I didn't have any). I also put pecans on top, but next time I will mix them in with the granola and oats b/c some got a bit burned. Oh, and I also used low-fat granola and smart balance margarine, although you couldn't tell!

Make Ahead Lunch Wraps

These were great. I halved the recipe and used refried beans instead of pinto beans. It made about 12 large wraps. I mixed the refried beans with burrito seasoning before combining with other ingredients. Since many said these needed some spicing up, I also added some sliced jalapenos, which made it quite spicy. So spicy, in fact, I had to pick a few out. I like spice, but that was a little too much with the spice from the cheese, the tomatoes with chilis, and the burrito seasoning. I also used instant brown rice, which worked just as well as regular rice. I will definitely make these again!

Bird Seed Squares

After a few modifications, this was amazing! I happened to have all this stuff on hand and I wanted to use it up so I tried this recipe. I added peanuts to the dry ingredients and the chocolate powder went into the wet ingredients, as suggested by another reviewer. I thought that the wet ingredients were not wet enough, so I also added 3 tbsp of butter. I originally tried pouring the wet ingredients on top of the dry ingredients, as written the recipe. However, they would not seep down (wet ingredients still too thick), so I ended up just mixing them in. I'm so glad I did; it was not crumbly at all, and it was delicious. I'll definitely be making this again, with the modifications as described.
