Brown Sugar Meatloaf

I'm not normally a big meatloaf fan, but this was great! I used BBQ sauce because I didn't have ketchup and heavy cream b/c I was out of milk (and only 1/4 cup). I accidentally forgot the onion and added about a tbsp of worchestshire to the meat mixture. I put it in muffin tins and cooked for 45 min. I added the brown sugar/BBQ sauce mixture to both the bottom and top of each meatloaf "muffin", though I would recommend waiting until the last 15 min or so for the sauce on top otherwise it goes everywhere. I would also recommend putting a cookies sheet below the muffin tin in the oven if you go this route to catch any grease. I will definitely make this again!

Delicious Ham and Potato Soup

This was FANTASTIC! I know this will become a regular in my house - and I will probably always make potato soup like this from now on. It turns out to be the perfect consistency. I made some small changes. I omitted the celery (had none) and added celery seed instead. I added the bouillon at the very beginning and used 1 cup half and half in place of 1 cup of the milk. Yum! Next time I'll double it.

Grilled Portobello Mushrooms

I halved the vinegar because I knew it would be too much and and my boyfriend still could not eat it. I thought it was good, hence the two stars. As written (4tbsp vinegar) this would be inedible to us. Sorry!

Eggplant Parmesan II

This is a wonderful recipe! It's fast, tasty, and healthy. Now I look forward to getting eggplant in my foodshare! My boyfriend balked at the idea of eggplant, but he loves this recipe. I usually just make one eggplant for just two of us and serve it over pasta. There's usually at least a lunch leftover, depending on the size of the eggplant and/or how hungry we are.

Gyros Burgers

This was great! We had them on onion buns with tzatziki sauce and feta (i added homegrown tomatoes and basil, yum!). I used oregano rather than savory. I made the mistake of chopping rather than grating the onions - it made it difficult to incorporate the onions into the hamburgers. I won't do that next time! Also, a garlic press would've helped too.

Tzatziki I

The flavor of this was very good, but the texture could be better; it was very thin after I processed it. My boyfriend, who used to work in a greek restaurant suggested that using a food processor might be making it thin. Next time I'll try hand whisking the oil and vinegar/lemon juice together before whisking in the yogurt and cucumber.

Blueberry Breakfast Sauce

This was fantastic. I added a layer of this to the Easy Cream Cheese Danish recipe on this site and it was incredible. I used fresh blueberries. I still have plenty left over and I look forward to using it in my yogurt and pancakes.

Easy Cream Cheese Danish

This was absolutely delicious, even better than I expected. I had a bunch of fresh blueberries from my share so I added layer of Blueberry Breakfast Sauce from this site to the filling. I halved the recipe, using only one can of crescent dough and 3/4 package of cream cheese; and there was plenty of filling. I didn't bother with the topping because this was just for me and my boyfriend, and the danish was great (and sweet enough) as is. I loved this and I know I will make it again and again! I might even try making individual blueberry and cream cheese danishes using the method suggested by other reviewers. Natalie thanks for posting this!

Butternut Squash Casserole

Bird Seed Squares

After a few modifications, this was amazing! I happened to have all this stuff on hand and I wanted to use it up so I tried this recipe. I added peanuts to the dry ingredients and the chocolate powder went into the wet ingredients, as suggested by another reviewer. I thought that the wet ingredients were not wet enough, so I also added 3 tbsp of butter. I originally tried pouring the wet ingredients on top of the dry ingredients, as written the recipe. However, they would not seep down (wet ingredients still too thick), so I ended up just mixing them in. I'm so glad I did; it was not crumbly at all, and it was delicious. I'll definitely be making this again, with the modifications as described.

Elegant Pork Loin Roast

This was good, but not great. I made it in the crockpot, which I probably wouldn't do again. The crockpot made the prunes and apricots mushy, and the pork, while moist, shredded easily and thus I ended up with kind of a shredded pork in a mushy sauce. I served it over rice with some vegetables, and while it was decent, I probably won't make again.

Penne Pasta with Cannellini Beans and Escarole

Unfortunately, we didn't like this so much. It really didn't have much flavor - it just tasted like beans and escarole. I shouldn't have been surprised given so few ingredients, but I did add red pepper and some parmesan cheese and it was still pretty bland, although the red pepper did help. Usually we take leftovers to work, but we threw this out.

Chocolate Crinkles III

These were awesome! I was looking for something right away, so I froze the batter while I preheated the oven, and made one batch (effectively half) on a cookie sheet. Those were okay, but not very chocolately. The 2nd batch froze for an extra 15 mins while the 1st batch cooked. I put the second batch in a muffin tins, just rolling the balls pretty big and putting one in each muffin cup. I was vigilant not to overcook them (I cooked the cookie sheet batch for 10 minutes, but it was too long), I cooked them for about 13-15 minutes in my oven, although it's hard to tell b/c I kept checking on them. I learned that they puff up a little when they are done. They were awesome! Fudgy and perfect. Next time I might add chocolate chips or maybe a mini peanut butter cup in the middle of the muffin cup before i bake.

Catherine's Spicy Chicken Soup

Unbelievably tasty and pretty healthy too! I realized at the last second that I was out of chicken boullion, but it still turned out great without it. I also did not add the sour cream, and next time I won't use the whole tomatoes - I don't see the point of them really. I made a huge batch and froze it in individual containers to bring to work, and it works out great! I just take each portion out of the freezer a night or two before and stick it in the refrigerator...an easy and healthy workday lunch! If I want to indulge a little, I throw some sour cream, cheddar cheese, and crushed fritos on top. I'm so glad I found this recipe! Thanks!!!

Honey-Glazed Chicken

The chicken was juicy and delicious, but I'm not sure it lived up to the name "honey glazed". The predominate flavor was the soy sauce and sherry I used, not the honey. Although it was still delicous, I might try it next time with apple juice, since I like the combination of sweet with chicken.

Garlic Red Potatoes

Great potatoes! I used half the butter and a half a large lemon. I used 4 medium sized red potatoes (Not sure if it was 2 pounds) and cut them up into about 1/4 inch thick and about 1 inch wide pieces, and they took about one hour to cook at 350, although I did have other things in the oven also.

Chili I

This was hardly edible after simmering for two hours...the beer taste was too strong and it was too sweet. However, it tasted much better after sitting in the refrigerator for a day, so I gave it three stars. However, even after the flavors had a chance to meld in the refrigerator, it was still just okay. I've made much better chili for much less money and effort. I won't be making this again.

Roquefort Pear Salad

This salad is amazing! I almost didn't carmelize the pecans because I thought it might be too sweet, but I'm glad I did because it was perfect. I'm already looking forward to eating the salad for lunch tomorrow.

Beef Stew VI

This was delicious, and the meat was really tender. I'll be making this all the time for now on. I did dredge the beef in flour before cooking in the oil, and I also added some flour in with the water/boullion mixture (putting it in a jar and shaking, as some reviewer suggested). It was thick enough for us at the end, so I didn't use the cornstarch.
