Turkey Tetrazzini II

This was yummy! The whole family loved it. Great for leftover Thanksgiving turkey. I added 1 1/2 cups of frozen peas which gave it just what it needed. I made the original 8 serving recipe and thought it would be way too much for the 4 of us but it was so good that everybody had seconds!

Sugar Cookie Icing

I wanted to make those adorable melted snowman cookies. This icing worked well for that. You can certainly taste the almond extract which was a nice added flavor to the sugar cookie.

Pesto Tomatoes

These are delicious! I used my garden tomatoes, Genoese pesto, and fresh grated Parmesan. The Genoese pesto was the best. You find it in the refrigerated section. I made my own and tried other brands but it was just not the same. Also, the oil in the pesto drips down while baking so I found you don't need to oil the baking dish. After making these as directed once, I decided to use thick slices of the tomato rather than halving them and scooping out the flesh. I like this better.

Grandma's Chicken Chardon

Moist and flavorful! This is a quick and easy weeknight dinner. I followed the recipe exactly. My picky son asked me to make it again the following night! I would not change anything.

Easy Chicken and Corn Chowder

This was a little bit too rich for my taste. If I make it again, I will use a lighter cream or substitute the cream with milk. The corn made it very sweet as well. Overall it had good flavor with the combination of ingredients.

Stuffed Tomatoes

I really liked this one. I used ground mild Italian sausage and browned it first. I also used Italian seasoned bread crumbs and diced some of my own garden tomatoes in addition to the canned since I was tripling the recipe. This is great stuffed in green peppers as well but you will need to bake it longer for the peppers to soften.

Creamy PHILLY Pesto Chicken

This was delicious! I doubled the sauce, threw in some red & green pepper, then poured it over pasta. My son who is a very picky eater said this was a keeper!

Grilled Bacon Jalapeno Wraps

These were delicious! But be careful while grilling, the bacon drippings create high flames. Overall the flavor combination was good. Not as spicy as you may think. Try filling them with cheddar as well!

Bacon Ranch Chicken Skewers

Trying to grill it long enough to crisp the bacon but not dry out the chicken was difficult. Ended up with very dry chicken and under cooked bacon in the end. I don't think I will make this again.

Bow Tie Pasta with Sausage and Sweet Peppers

I was looking for a pasta dish that wasn't too heavy with creams & sauces. I wanted to incorporate sausage as well. However, I found this to be a little bland and dry. Added lots of fresh grated Parmesan which helped add flavor. Still searching.

Chewy Crispy Coconut Cookies

This is the best cookie recipe I've made! I added some chocolate chips to a few per my chocolate loving daughter's request. Personally, I like them without it. Not sure why some said they were too salty. I think this was a perfect combination of ingredients. Crunchy and chewy at the same time! My kids ate these faster than I could bake them.
