Charleston Breakfast Casserole

I have made this several times with many different variations. It is a great recipe that can be modified per your tastes and it still comes out great. A couple of important things. - Definitely use seasoned Croutons or a good Deli gourmet bread. - Definitely prepare the night before and then bake in the morning.

Broiled Tilapia Parmesan

I made this last night. DH and I are on the Mediterranean Diet so I made some substitutions for the butter (olive oil) and the Mayo (Miracle Whip lite). Incorporating fish 2x a week into our diet has been a challenge since we are not big fish eaters but this recipe is a keeper!! The substitutions worked great! Super easy to make also. A keeper for sure!

Beef Stroganoff III

Great recipe but the key is the mustard. I made it 2 times, the first time I forgot the mustard and was not too impressed, the second time I remembered the mustard and WOW, huge difference. It still amazes me how a simple ingredient can make such a difference.

Shiitake and Baby Bella Mushroom Risotto

Great recipe. You will have to stir this for a good 20 minutes but like was mentioned, it is well worth it. I added a clove of garlic to sautee at the beginning and then added 2 bay leaves to the warm vegetable stock. My family loved it. I will use this one again for sure.

Butternut Squash Risotto

Great Recipe!! I agree with others that you do not need that much broth. I roasted my squash in oven with a little olive oil, salt and nutmeg then pureed. This makes it smooth and I really like that as well as enhances flavor. I think the type of risotto you buy will change cooking time and also broth requirement but overall this is a keeper recipe for sure.

California Italian Wedding Soup

Excellent and easy recipe. My husband likes it so well I have made it at least once a week for the last month so I felt compelled to comment. I substituted spinache and used ground turkey and it was excellent.

Hot and Sour Tofu Soup (Suan La Dofu Tang)

This is a very easy and quick soup recipe but tastes nothing like a traditional hot and sour soup. I will probably not make again.

Baked Brie in Puff Pastry

This is a great way to serve Brie but you definately need to brush the puff pastry with an egg wash or else it just is too dry. I have tried this several times and the more egg wash I used, the better.

Surprise South Beach Mashed 'Potatoes'

This is a great alternative to mashed potatoes. I did boil the Cauliflour in chicken broth and I also added a little parmesean cheese. My husband LOVED them and so did I. This is definately a keeper.
