Red Lentil Curry II

I've been meaning to try lentils for a long time. I just went vegan, so here it goes: I had all the ingredients except tomato puree so I used fire-roasted diced tomatoes. I overcooked the lentils, but that didn't seem to matter. I would like it a little spicier and with more sauce. Next time I will cut the lentils in half (instead of doubling spices--it made a lot!), find something hotter than Patar's mild curry paste and pick up some Indian chili powder. YUM.

Amazing Pork Tenderloin in the Slow Cooker

I love pork loin in the crock pot. So easy. It was done in 4 hrs and split with a fork. However, the soup mix did make it salty. I'll try to find a low-sodium mix or make my own next time. My husband was excited about the au jus. I tried to hand him a plate but he insisted on a bowl!

Baked Oatmeal II

Excellent. I hate slimy oatmeal, but was giving it another try. This was perfect. Chewy, but not dry. I also reduced sugar and substituted apple sauce. I also plan to add flax and nuts.

Love it! As a kid, we made air popped. I quit buying my husband microwave after health rumors. This reminds me of my first job at a movie theatre. I also did the canola/smart balance suggestion.

Quinoa and Black Beans

This was an excellent, easy, one-pot quinoa dish. I served with salsa and probably could have used some cheese and avocado. Quinoa is always better cold the next day, so it can only get better!

Cajun Style Baked Sweet Potato

This was excellent. I've been trying to "love" sweet potatoes for a long time. Cooked exactly as listed--all the spices were on my shelf. Served with lean meatloaf and smashed cauliflower.

Crustless Spinach Quiche

Gluten free! This is a good basic recipe, similar to what I made as a kid (which you microwaved for 9.5-11 min on med-high). I cut the cheese in half and added 1 c. fat-free evaporated milk. Also added some cayenne pepper. I'll try the muffin tin and egg beaters next time.

Roasted Garlic Cauliflower

Excellent and so easy! Definitely use fresh garlic--I left the garlic cloves whole (I usually use the minced garlic in a jar, but I was going for the whole roasted garlic like I've had in a restaurant). I agree that you could also cut the oil down. I think I'll add some different spices next time--maybe red pepper flakes.

Golden Rum Cake

AUTHENTIC! I travel to the caribbean frequently, and this is EXACTLY like what you buy on the islands. WARNING: The glaze is alcohol! This should not be served to children or at work! And deleting the rum or glaze means you are really not making rum cake. To each your own, but as is--this recipe is perfect! (To make Gluten-free use, use GF cake mix and Jello Brand or Royal pudding mix). I haven't tried the chocolate version, but this is also sold in the islands.
