Dad's Shrimp Pie

If you have a love for shrimp and a love for cheddar cheeze I have a simple rich main dish that you may like. My family calls it Dad's Shrimp Pie.
We take a two pack of pre-made pie crusts from the Grocers shelf and fit them to a 12" x 16" baking pan.
Then take 3 cans of small cooked shrimp about 18 ounces and spread on the bottom of the pan.
Grate 2 pounds of cheddar cheeze (the sharpness is your choice we use extra sharp) over them.
Brake 8 eggs into mixing bowl.
Add 2 cups of milk at least 1% (whole milk will make it richer)
Add 1 tblsp of oregano
Add 3 tblsp of parsley
Add 2 tblsp of chives
Add 1 tblsp of minced onions
Mix this all together and pour over the cheese and shrimp.
Bake at 325 degrees for 1 hour. Let stand for 10 mins before cutting..
This makes between 8 and 16 servings depending on how hungrey your eaters are.
