Black Bean Hummus

Reviewed: May 29, 2010
I make this without the olives and I substitute fresh lime juice for the lemon juice. Sinfully delicious sans the sin!

Tasty Reuben Soup

Reviewed: Dec. 17, 2007
Quite tasty, especially for homemade soup that takes little more time than opening a can of the instant stuff! I used coleslaw mix to save even more time, and I believe the carrots and red cabbage further added to the flavor. Also used a spicy beef sausage with cheese and jalapenos - DH is a lover of hot. Resisted the urge to pre-saute the sausage and onions, which I think allowed all the flavors to fully meld in the broth.

Sweet and Spicy Nuts

Reviewed: Jul. 20, 2007
These were a great addition to the appetizer assortment preceding a spicy low-country boil. A few changes made all the difference. I started with a can of salted mixed nuts and reduced the salt in the recipe. I added a small dollop of butter to the sugar recipe, and waited until the sugar began to melt before adding in nuts. Took time to separate and dry on waxed paper, without being too picky that every single nut was separated. Both kids and adults liked these!

Cheater Pot Pie

Reviewed: May 29, 2007
Like most, I found this to be the perfect starter recipe. After reading the previous reviews, I made the following tweaks: For the chicken, I used two chicken breasts boiled with salt, pepper, and garlic powder (brought to boil, then turned off heat and allowed to cool in pan before cubing). I used one can Healthy Request Cream of Chicken and one of Cream of Potato. I used half the biscuits to line the bottom of my casserole dish and baked for 15 minutes before adding the filling. As a personal preference, I added two diced hard-boiled eggs to the filling just before pouring into the casserole dish, which makes the sauce rich, creamy and flavorful. When done, this cheater recipe beat the pants off my neighbor's "from scratch" recipe!

London Broil I

Reviewed: May 23, 2007
Great flavor, but a bit too salty, and didn't tenderize as much as I hoped it would, even after fork-piercing it to near ribbons and marinating overnight. Next time I plan to use low sodium soy sauce, and add either lemon or vinegar to help tenderize the meat. On the plus side, the leftovers continued to improve in flavor the longer they sat in the fridge!

Absolutely delicious! I use tri-color rotini for extra color and flavor, and I get rave reviews with every serving. Make extra so that you'll have plenty for leftovers.

Mango Tango Black Bean Salsa

Reviewed: Jul. 31, 2005
This is a very versatile recipe, and especially delicious if made the day before. I've served it exactly as written, and also added chunky salsa. Rave reviews both ways. This is my most often-requested recipe.

Fluff Dip for Fruit

Reviewed: Jul. 31, 2005
Wow! This is almost good enough to eat with a spoon straight from the serving bowl (just don't get caught). I made eight servings for five guests and it wasn't nearly enough. Next time I'll make three times as much as I think I will need.
