Tomato-Curry Lentil Stew

I'm not sure about this recipe. Too many lentils for the amount of liquid and I wish I'd used broth instead of water for more flavor. Thought it had an interesting taste at the end, but only after I added twice as much curry and some bouillon. I will make it again, but will do it quite differently next time.

Best cookie recipe. Love these things. It's amazing to me that you don't have to use eggs! These are a no-fail recipe.

Peach Muffins

LOVED these hot from the oven. They are so tasty--perfect blend of cinnamon, sweetness, and peach. Next time, I will serve them with vanilla ice cream, as they taste like a fluffy cobbler. (A couple of changes I made--used 1 part wheat, 1 part white, and 1 part wheat germ for the flour mixture; subbed half applesauce for the oil; did half brown sugar instead of all white sugar.)

Whole Grain Banana Muffins

I thought this recipe was really blah. Maybe not sweet enough, maybe just not enough taste to it? I don't know. Might've been tasteless bananas. I followed the recipe almost exactly (used all whole wheat flour instead of part pastry) and I didn't have the nuts, but honestly, the raisins were the only saving grace in the muffin.

Spinach Pancakes

I loved these pancakes. My kids didn't, which actually surprised me, because the flavor is really mild and with salt they are quite tasty. But I ate almost the whole batch as my meal and was quite satisfied. A couple of things I did: substituted 3 cups of fresh, chopped spinach for frozen, plus added a little bit of water to moisten it up. I also seasoned it with some parmesan cheese and added some chopped bacon to the last few I made, which was really tasty. Loved the recipe!

Cream of Pumpkin Soup

Very good! I did salt to taste, but did most of the recipe as it asks. I used boullion cubes instead of broth, and milk instead of cream, but I like a thinner consistency better anyway. A very sweet soup, hence the 4 stars. I may prefer a savory pumpkin soup. I served it with the YUMMY croutons, some avocado and a little chedder cheese, which made it a tad more savory. Try the recipe and make it yours!
