Black Bean Quesadillas

great recipe!! made this for a huge party i was having and i am vegetarian...i made these and added spinach to them...it was great...even my meat eating friends and husband liked them. I also did a version for the party where I added cooked, cubed chicken to the recipe. Those were also really good... Served them with homemade salsa and sour cream...everyone loved them...

Spinach Enchiladas

LOVE this recipe...the only change i made was to use green enchilada sauce instead of red but i imagine its great either way...next time i will spice up the filling a bit with some chopped and sauteed jalapenos, some cumin, etc. because the filling tasted like basic spinach filling...great recipe tho...just needs a lil more mexican flair... :)

Caribbean Holiday Shrimp

Very good recipe. Easy to prepare and very flavorful. Even the kids loved them. Would be great over a bed of spinach and Spring Mix with the marinade drizzled over. Will do this next time. The only thing is that I am not sure about the cilantro. Seems contradictory to the rest of the ingredients. Very good recipe tho overall. Here in Florida, you get shrimp every way possible. It was nice to taste something different for a change. Everyone - even kids- enjoyed it.

Mushroom Pork Chops

It was good for a quick weeknight meal. Easy, cheap and fast fare with good flavor. I added a bit of wine to the sauce as it was cooking and sauteed the mushrooms and onion with some garlic and olive oil first....

Impossible Pumpkin Pie

I'm sorry but I really did not care for this recipe. I used a whole can of milk. I was very excited to try it because the calories/fat is so much less than traditional pie recipes; however the consistency was weird and I didn't care for the flavor. I am a traditional pumpkin pie freak so maybe that is why I didnt like it. I miss the creamy texture and even my son who loves pumpkin pie didnt like it. We ended up throwing most of it away. :(

Salsa Chicken

A lot of bang for the easy prep. Amazingly easy to make. I didn't change a thing and everyone loved it. This is a great recipe and definitely a keeper!! UPDATE: I've made this a couple of times now and my favorite variation is to use Ortega salsa verde in place of the regular salsa. To me, that gives it the PERFECT punch. I don't even top it with anything else.

Fresh Tomato Salsa

good simple recipe.... I didnt have more than one serrano pepper so i used 1 aji limo, 2 habaneros and one serrano and WOW...very hot... My jalapeno variation and personal favorite: 2 tsp garlic and double the cilantro, 2-3 jalapenos with some seed removal...dash of paprika... rocoto pepper variation (my hubbies favorite) with 1/2 tsp garlic and 1/2 the cilantro, 1/2 to 1 pepper, veins and seeds removed as these peppers are HOT....double the salt.... no matter what your taste in peppers, this is a great and easy recipe...great for parties and bbq's too... we love it...i just throw it all in my food processor and voila! obrigado!

Potato Skillet

Very good. I used chorizo instead of bacon cause that is what i had on hand. Definitely a keeper that the whole family enjoyed. 2009 UPDATE: I prefer it with bacon. I fry the potatoes on lower heat for a longer period because i like them crispy...my whole family still loves this. To make it easier, i buy the Oscar Meyer real bacon packets on the salad dressing isle and top it with those. I also spice it up with some cajun/blackened seasoning. A really good recipe!!

Jalapeno Chicken II

Excellent recipe AS IS! Lots of flavor!! We really enjoyed it and it was a great change from the "norm." The flavors work really well together. I baked it and had no issues with the jalapenos being too crispy however I love raw peppers so i was perfectly happy with their level of crisp. The bacon is a must have - i hardly ever eat it so including it was not an issue for me and it was the final flavorful touch. I dont think it would be as good without it. Thanks for such a great recipe!

Sausage-Potato Casserole

eh...we didnt care for this so much...i dont know if i did something wrong but i had to soak greese up with a paper towel before serving... i made it just as stated for once ...i did use beef kielbasa - maybe that was my mistake? the cheese was obliterated..it tasted ok tho...just way to greasy....

Cheese Ravioli with Three Pepper Topping

Very nice, light recipe. The only changes I made after reading many of the reviews was that I: 1. added 1 tsp garlic to the veggies 2. used 1 cup chkn broth, 1/4 cup lemon juice (I ran out of capers), 1/2 cup white wine I also added roux to the sauce to thicken it up. My whole family really enjoyed it. It had a wonderful, light flavor different from what I normally cook. Thanks!

Greek Lentil Soup (Fakes)

I just recently went vegetarian for health and weight loss. This is one of the first recipes I tried. Wonderful! I used broth instead of water. Out of habit I accidentally used chicken broth, however next time i will use veggie broth. I also added an extra carrot and a finaly chopped zucchini for extra veggies. In addition, I didn't have brown lentils on hand - i had red, black and pearl barley. So i did 2 oz red lentils, 2 oz barley and 4 oz red lentils. It was superb. I def recommend to everyone.

No Bake Cookies III

These were quite yummy. I made them exactly as written. I topped them with cinnamon and powdered sugar. My son loved them. I boiled for exactly a minute though and did them just as described in the recipe.

Kentucky Pecan Pie

Pecan is my dad's favorite pie so i made him this after reading all of the great reviews. I did have to cook it about 20-30 minutes longer. But according to my dad, stepmom and brother, it was the best pecan pie ever. My stepmom said it tasted like it belonged on a restaurant menu. She said it was VERY rich and had a wonderful consistency. Thanks for a great and dependable recipe!

Ronaldo's Beef Carnitas

good solid recipe...cost effective and easy to prepare....i basted it with winter ale as it cooked....kept it tightly covered so was about half submersed... cooked it for 4 hours and it fell apart easily....shredded it, mixed in a little of the au jus and 1/2 cup enchilada sauce....rolled it up in softened corn tortillas, topped it with enchilada sauce and cheese and baked in the oven 15 minutes.... everyone liked it...mild enuf for the whole family...my husband put leftover meat on hoagie rolls for lunch...

Green Chicken Enchilada

quite good and easy to make...i cooked chicken breasts and then shredded them but i imagine canned chicken would work just as well and be quicker and cheaper.... i added sauteed onion, garlic and green pepper...was going to add a jalapeno but i'm glad i didnt! the sauce was spicy enuf! had i added more than the salt/pepper it would have been too spicy for the kids... all in all we really enjoyed this recipe! Thanks!

The Best Rolled Sugar Cookies

This recipe is excellent for its purpose of rolling and cutting cookies...i tried another sugar cookie recipe and hated it...it didnt roll and cut as well and the cookies were flat and crispy... i always come back to this one... this year i made ghosts for my son's halloween party/parade and a friend of my daughter's birthday is on halloween so i made him a cookie bouquet using this recipe.... these cookies make GREAT cookie bouquets... I add an additional cup of sugar and tsp of vanilla and my family liked them a LOT better...it didnt seem to affect the way they cooked either so that was good...this is still the best sugar cookie recipe ever for cutting out shapes and making cookie bouquets!! NOTE: i live in south florida where the heat and humidity is high - i always add between 1/4 - 1/2 cup more flour to all my cookie recipes Another NOTE: ....the dough, as you're rolling this particular recipe out does tend to be sticky ....simply keep dusting it with powdered sugar and you can continue to work with it...while adding additional flavor... Thanks!

Chicken Tortilla Soup I

Excellent recipe! we're all sick this weekend so to simplify, i used Tyson canned chicken and it was still good.... i gave it 5 stars based on the hearty flavor, how easy it was to make and the fact that most of the family enjoyed it... I read several reviews and used the cumin instead of the oregano....and also, i used all chicken broth and no water....i like my soups thick and hearty so i did not use additional liquids.... i still thought it needed more flavor so i also used 1 tsp each pepper and salt...in addition i juiced two limes into the soup as it was simmering.... i think the lime added just the touch it needed..... the soup is incomplete without the cheese and tortilla chips...i also added 1 tsp sour cream....the addition of these brings it all together... Thanks! will definitely be making this on a regular basis....
