Hummus III

My picky eater loves it! I made it exactly as stated except I did add 1 more lemon( I love sour) then added a little more water until my blender could handle pureeing it! My blender is old and cheap. Both my kiddos and I enjoyed dipping cucumber slices and home made pita chips in it. Thanks for a great basics Hummus! I will play with it eventually. But it is a keeper for my picky one for sure!

Awesome Slow Cooker Pot Roast

I have made this numerous times! I tweak it and play with it too. Like instead of water I'll use low salt or no salt beef broth or red wine and add 1 tbs or 2 of Old Bay Rub it has brown sugar in it, yum! When I use the Old Bay I try to use low sodium onion mix too or else its too salty. Of course I brown the roast well on all sides first. Also put fingerling potatoes or red potatoes, carrot and onion.When I'm not using bay Rub I like to use lots of fresh herbs, Rosemary and thyme. Once I used a Moroccan spice blend instead of fresh herbs or Bay Rub. It was pretty amazing. I just love how you can play with this recipe a lot and have fun without, for the most part ruining dinner!

Grandma's Doughnuts

We loved these! Quick and fun! They floated as soon as they were put in the oil so I just waited until they were a dark golden brown on one side then flipped and waited until dark golden brown then removed them. You could use half the amount of oil if desired. I cooked these in a 3qt pot 3 at a time. They came out perfect. Going to make these for a P.J party this Fri!

Cinnamon and Lime Chicken Fajitas

It is a fav in our house. Just covered the chicken with foil(Helped keep it moist)and kept checking so it did not dry out/burn.

Southern Fried Cabbage

Made this for New Years and the whole fam loved it! I thought it was to oily but still really good. Followed recipe exactly. Next time I'm going to just use the bacon fat only to fry it in. Maybe add a little oil if needed as I go but I think it can be done without.

Holiday Cranberry Sauce

Been using this for a few years but this year I added a can of pineapple chunks along with the cranberries and it was yummy! I figured it would add more fluid to the sauce, and it did become watery and was not thickening but I added the rest of the sugar (1/2 cup) and simmered a little while longer and got it thick. Normally I only add a 1 1/2 c sugar.

Sweet Potato Casserole II

Tried this recipe 3 year ago and it was a big hit! Kids ask for this one every year. The only thing I do a little different is that the pinch of cinnamon has gotten bigger every year, yum! Oh and I use real butter never margarine! Lol. This has become a great family tradition and one that my kids associate with good memories. Thanks!

Yia Yia's Tzatziki Sauce

Was delightful as is, yum! But I like dill and lemon so I added 2 lemons juiced and 1 bunch of Dill minced. I gave it 4 stars because I have still tasted better. But I will definately make again!
