Pumpkin Stew

Excellent stew. Had to almost triple the amount of water, but I used beef broth instead for a lovely rich taste. Omitted the beef granules too. Omitted the tomato for personal tastes. Husband said it was the best stew I ever made. The pumpkin adds a great offset flavor.

Black Bean and Couscous Salad

My new favorite summer salad. Made exacly as noted. Easy to add or subtract flavors as you like. Will probably remove some of the oil to reduce fat in the future.

Apple Crisp II

Wonderful! Even better cold for breaffast. :) I will increase the butter half a stick next time, the crumbly section was a little powdery.

Barbecued Beef

Wonderful. Didn't stray at all from the instructions except mine was so tender after 8 hours I didn't need a fork to shred it. Made for my visiting family to rave reviews!

Chocolate Chip Cheesecake Brownies

This is not a brownie recipe it is really a "bar". Note this tastes totally awful the first day, the 2nd day its flavors really come together though and it is very good. Could use a stronger cheesecake flavor and there isnt really enough of the cookie dough topping, will increase next time. Altogether a rich treat!

Pineapple Cake II

Husbadn loved it but I did not. Although a nice dense cake it certainly did not have much of a pineapple flavor which is what PINEAPPLE cake should have. Also did not care for glaze the next day. Overall not bad but not sweet enough.

Banana Bread V

Rivals my mother-in-law's banana bread!!! My husband couldn't keep his hands off it-ate it for breakfast, lunch and snacks. Wonderful taste though may increase the bananas by 1/3 or 1/2 cup next time. Don't think it would hurt! Texture perfectly dense and incredibly moist without being too wet.

Cottage Cheese Chicken Enchiladas

Excellent! My husband cannot bear anything spicy and he just loved it. I spiced up my portions by adding some peppers and spicy salsa in the cheese mixture. Wonderful!- I used all low fat and no fat ingrediants and it worked fine
