Slow Cooker Chicken and Dumplings

Reviewed: Dec. 28, 2009
It is a pretty good base recipe. As it stands, without modifications, it is a little bland with too many dumplings. I found one package of biscuits was more than enough to feed my family of four with extra servings for everyone and left overs to boot. I did add some water mixed with a couple of tablespoons of flour into it when I added the biscuits, because it looked a bit runny. And I had to cook the dough longer than 30 minutes to cook all the way through. I suggest making the dough balls small, as they expand quite a bit in the mixture. It really needs some other flavoring though. Our taste lead me to add: salt, fresh cracked pepper, garlic powder, onion powder, and paparika. I also like to make complete meals, so I added a couple of carrots, diced, and a cup or so of frozen corn. Like I said, it is a good base recipe.

World's Best Peanut Butter Fudge

Reviewed: Dec. 23, 2007
I am not a candy maker - at all!!! And I am not a great baker. This recipe was so easy. I even fudged (pun intended!) on the amounts of each ingredient. I didn't want to measure out the exact ounces of peanut butter and marshmellow creme, so I just adjusted by eye balling it. I didn't use a candy thermometer, and if I had one, I wouldn't know what temp it should even be! I don't know if you normally put flour in fudge, but it turned out great, so I say go for it! My husband wasn't excited about me making this, but now he keeps sneaking more. If I had to guess the key to my success, it was really letting the milk, sugar, butter mixture get to a good boil and then letting it cook for quite a while at that boiling point, constantly stirring. I cooked this mixture for about 7-8 minutes once it reached a good boil. I didn't pre mix any of the other ingredients, just added them after I took the milk mixture off the stove. The peanut butter and marshmellows melted into the mixture just fine and came out smooth. Then I added the flour and poured it all into a greased pan. I left it on the counter to cool for a couple of hours and viola - yummy fudge! If this recipe were any more complicated, I wouldn't make it!

Mexican Rice II

Reviewed: Jan. 18, 2007
All I can say is YUM!!! I have Mexican rice in restaurants and it has always been just OK; an OK side to the meal. And I have tried the boxed Mexican rice from the store and that was boring. So we tried this and it was great! My 3 year old loved it and he has to be the pickiest eater on the planet!!! Followed the recipe exactly, except I had jasmine rice, so I used that. It never fluffed up, but still amazing.

Cherry Pie III

Reviewed: Dec. 24, 2006
Very simple pie! I don't make my own pie crust. I just use the roll out pie crust from the store. 10 teaspoons of corn starch equals 3 tablespoons plus 1 teaspoon, just for easier measuring. I used three cans of Oregon Tart Cherries, drained really well. I also cooked a bit longer than suggested. My husband really hates when you cut into a pie and it oozes out everywhere, so I cook it longer to ensure its thickness. If you stir carefully you shouldn't mush up too many of the cherries by cooking it longer. ENJOY!

Japanese Chicken Wings

Reviewed: May 13, 2006
So good! Very sticky and sweet. I didn't have white vinegar, so I used apple cider vinegar, which I think was wonderful. I add just a bit of corn starch to the sauce to thicken it up before I poured it over the wings. Will definately make it again!

Good Old Fashioned Pancakes

Reviewed: Jan. 5, 2005
Very Good! Just some small changes: I reduced to 1/2 t., otherwise too salty, I use kosher salt; increased milk to 1 1/2 cups, still thick, but easier to pour; and used 4 t. of backing powder. This is a very easy, recipe that produces thick, delicious pancakes! Thanks for sharing!

Clone of a Cinnabon

Reviewed: Apr. 30, 2004
This is a favorite. I enjoy the taste of CinnaMonsters to Cinnabons, so I alter this slightly to get the other brands taste. I use more real butter in the icing to create the change. Just from experience, NEVER make the icing with margarine. That was all I had one night, so I tried. Makes the icing too runny and not very smooth.

Grandma's Lemon Meringue Pie

Reviewed: Apr. 30, 2004
Easy to do and very lemony in flavor. It could have to do with the size of lemon I used. Make sure you really whip the egg whites to a stiff peak!

Alysia's Basic Meat Lasagna

Reviewed: Apr. 30, 2004
This is simple and great. After the first time, you can play with this recipe so easily. Like now I add fresh basil leaves to the sauce, or I add more cheese, or just what ever. It tastes great without alterations, I just enjoy experimenting and this is so easy to do that with!

Fresh Strawberry Pie I

Reviewed: Apr. 30, 2004
This was very good. I added a little cream cheese (whipped smooth with a little sugar) to the bottom of each pie crust before adding the strawberries and jello mixture. Very good. A definate repeat at our house!

Beef Stroganoff III

Reviewed: Feb. 29, 2004
This is delicious! My husband just loved it. It is definately a hearty meal. We ate it over egg noodles (the thicker kind from the frozen food department of the store). I added a little more garlic to it, but other than that, it was great!

Cream of Spinach Soup

Reviewed: Feb. 11, 2004
This soup is great! I ran out of minced onion, so I used about a teaspoon of onion powder. This soup was so great that my 15 month old son, who is the pickiest eater in the world and only eats cheese, loved it. He ate bite after bite and he refuses baby food of any kind. Great! Thanks

The Best Rolled Sugar Cookies

Reviewed: Jun. 27, 2003
I love this recipe!!! I can't imagine better tasting sugar cookies. I made mine with a thicker, richer icing than suggested, but she was right, people will love you for bringing these to get togethers. I didn't find it necessary to add any additional sugar or powdered sugar. Any sweeter, especially when you add the icing, and these cookies would give me a headache!!! These are great!

BBQ Chicken

Reviewed: Jun. 25, 2003
This was very easy and good. I was looking for a quick recipe for boneless, skinless chicken breasts on the grill, that did not require marinating. Of course the cooking time was much shorter, but the taste was very good. Quick and simple. I will use again! Thanks.
