Linda's Monster Cookies

Great recipe! Was asked to make cookies on short notice, so had to use what I had in the house. I never have margarine, so I used all butter. Didn't have any candy pieces, so used coconut and butterscotch chips along with the chocolate chips. I also forgot to put in the salt. Turned out great!!

Debbie's Amazing Apple Bread

Great recipe. I was looking for something to do with some apples I didn't really like. I used brown sugar and cut it to 1 cup, substituted apple sauce for the oil and used white whole wheat flour. It was fabulous!!! Thanks for sharing!!!

No Bake Granola Bars

This recipe is great. I made it with chopped pecans-my daughter is not a fan of almonds, all natural peanut butter and diced dried apples I found at Bob's Red Mill instead of the cranberries. My daughter loves them and I feel like I am giving her a healthy snack for lunch and before swimming. I was able to cut them into about 2 x 2 squares. They are so rich, she only needs one to be satisfied. Thanks for sharing your recipe!!!

Shortbread Cookies II

These were great! I was looking for a cookie I could use for mini fruit pizzas. This one worked well. Just made them a little thicker. Rolled into a log and put in fridge for awhile. Then sliced them and baked. Will be making again for a Scotland project my daughter is doing.

Banana Banana Bread

This bread is great. Had 7 bananas that I needed to use, so left out the butter and just used the bananas for moisture. Also used whole wheat flour. Didn't even miss the butter. It was moist and super easy to make. Thanks for sharing.

This recipe can easily be made low in sugar. I used unsweetened coconut and Trader Joe's all natural crunchy peanut butter. The dates are a natural sugar with a high amount of fiber. This was great! Not too sweet and satisfies the chocolate craving! Thanks for sharing.

Blueberry Zucchini Bread

Great recipe. I always try to change recipes to cut out as many simple carbs as I can. I have a really picky kid, and it's one way I feel I can sneak in healthier choices. Sometimes it works well, and sometimes it is a flop! With this recipe, it worked really well. I used 1 cup applesauce (no oil)l, 1 1/4 cup brown sugar (no white sugar) and 2 1/2 cups whole wheat flour (no white flour). I find the all natural applesauce has enough sweetness that you can cut way back on the sugar. I also cut out the cinnamon as we don't like cinnamon. My super picky daughter loves it! Mom's Zucchini Bread

This recipe is awesome! I always substitute applesauce for the oil. This also allows for cutting back on the sugar. I used 1 cup brown sugar and 3/4 cup white sugar. I also used 2 1/2 cups whole wheat flour in place of white flour and because I don't like using only cinnamon, I used 2 tsp apple pie spice instead. My family loves it! What a great way to get my picky daughter to eat veggies. Thanks for sharing.

Bread Pudding

This was great! I was looking for a recipe that was more of a custard consistency as I don't like dry crusty bread pudding. This is it! Super easy and really moist. I did have to cook it about 15 minutes longer than suggested. Thanks for sharing!

Mandi's Cheesy Potato Soup

This was super easy and really good. I was surprised at how much flavor the steak seasoning added. I did put in bacon and extra cheese and used fat free half and half instead of milk. I didn't use the flour and margarine mix because other reviews said it was really thick the next day and I made it for a potluck tomorrow. Thanks for sharing!

Caramel Popcorn Balls

Wow! Super good! I like lots of caramel, so I used 2 bags of microwave kettle corn. Cooked to a soft ball stage, as I also like them chewy. Definitely enough caramel by doing it this way! Thanks for sharing!

Extra Gingery Bread

Wonderful recipe. Many reviewer have left out the crystallized ginger because they can't find it. In my opinion the crystallized ginger makes this recipe extra special, so don't leave it out. It is also called candied ginger and can be found in the bulk section of many supermarkets. Thanks for sharing!

Grandma's Green Bean Casserole

This was really good. I love green bean casserole, but usually I am the only one who eats much of it. This year I used this recipe and there were no leftovers. I did put some fried onions on it as it just doesn't seem right without it. I also used the cracker crumbs. Thanks for sharing!

Libby's® Pumpkin Cranberry Bread

I was a bit skeptical at first as I didn't know if pumpkin and cranberries would be good together, but this was wonderful! The tartness of the fresh cranberries was a great contrast to the pumpkin. The only thing I changed was to replace the oil with applesauce. It was really moist and the oil wasn't missed at all. I also didn't have 2 pans, so I cooked it in a bundt pan for 60 minutes. YUMMY! Thanks for sharing.

Blackberry Puff Pastry Tarts

This was really great and easy. I had to use the pastry sheets because the store had no shells. I was being very lazy, so I cut the sheets into nine pieces each and basically made "raviolis' by putting one piece on bottom-adding ingredients-one piece on top and then pinched the edges together. They were much better cold. I shared them with the neighbors who loved them too! Thanks for sharing the recipe!

Best Lactose Free Blueberry Muffins

We just discovered our daughter is lactose intolerant. I was looking for a blueberry muffin recipe that she could enjoy. This recipe was really good. If you are concerned about the lactose, just substitute natural applesauce for the margarine. I always do this in recipes that call for butter, margarine or oil. Then you can also cut a bit of the sugar as the applesauce adds natural sugar. My daughter's only complaint was too many blueberries-I may have thrown a couple extra in! Thanks for sharing!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Wonderful! Didn't make the sauce for the top. Tastes just like in the restaurants but much cheaper! Made it once with regular coconut milk and once with reduced fat coconut milk. The reduced fat didn't change the flavor. Thanks for sharing!
