Broiled Scallops

Very good and easy to make. For a low fat version, I substituted with butter spray. My husband didn't know the difference! I also added some pepper. It was so good that we didn't need any extra dipping sauce, but I served with some lemon wedges.

Pad Thai

We recently got back from a trip to Thailand which inspired me to try cooking Thai food at home. This stuff is much better than the prepackaged meals you can get in the store. And much better than the pre-made sauces. It's worth the extra effort -- and there's not much effort at that. The dish was very easy to make and I've already made it a few times and for company.

Egg Tostada

This recipe was DELICIOUS and even better, EASY to make! We had a last-minute guest stay over the other night and I was looking for something to make with my limited stock of inventory in the fridge. I typed in "egg" and "cheese" and this was one that came up. I used whole eggs instead of the whites, and full fat cheese (monterey/jalapeno and shredded mix of mexican cheeses). I eyeballed the amount of cheese and salsa that I mixed in. I also added green onions and fresh cilantro for an added zest. Our guest went for seconds. The tortillas got a little soggy from the steam from the eggs, but it was good. This recipe would be good without the tortillas as a scrambled egg dish as well. Next time I will try the low-fat version!

Baked Slow Cooker Chicken

This is a great basic recipe for crock pot chicken. I read several reviews and added my own slant to it, just like the others. I added carrots and onions and sweet potatoes and garlic at the bottom (instead of the foil) and added 1/2 cup broth on the bottom of the pot. I also seasoned with paprika as in the original recipe, but also added garlic powder, salt, pepper, and an all-purpose seasoning. I seasoned it under the skin along with some soft butter. Olive oil can be used as well. I also stuffed the chicken with some of the veggies and garlic. I brought it to a party and it was delish! Super easy recipe, I prepared it in the morning and cooked on low for 4 hours until I returned and cooked on high for 2 hours.
