Downeast Maine Pumpkin Bread
I had rave reviews from family. I just needed something to make with my leftover mashed pumpkin, but this was so much better than what I originally made with the pumpkin. Everyone wanted extra! I intended to take this to 3 Christmas celebrations, but it barely made it past the first one. The "everything pumpkin lover" said this was the best pumpkin bread she had ever tasted. I didn't have 7x3 inch loaf pans, I only had two 9x5 inch loaf pans, so I divided it between the two and cooked it a bit longer, and it turned out perfectly.
