Hearty Breakfast Cookies

Wonderful! These are delicious, nutritious, and filling. I used brownulated sugar in place of brown sugar to save on calories and milled flaxseed in place of wheat germ as a personal taste preference and these were still fantastic!

Bran Flax Muffins

A lot of work (next time I'll try applesauce instead of shredding the apples), but worth the effort. I skipped the oil and was glad I did - the batter was very moist without it. Also skipped the nuts and still got the 15 yield. I made some other changes as well (whole wheat flour, fewer carrots) the recipe seems very adaptable. Thanks Jane, this is definitely a keeper!!

Extra Extra Rich Brownies

Very good. I skipped the frosting, swapped the cocoa and sugar measurements, and used apple sauce in lieu of vegetable oil. Still very tasty, and very rich!

Connie's Zucchini "Crab" Cakes

I wouldn't necessarily say that these taste like crab, but regardless - we LOVED them. I used olive oil in place of both the butter and the vegetable oil, and they were still fabulous.

Fabulous Homemade Bread

Fabulous is right! I made this in a rush and accidentally used white sugar instead of brown, and I intentionally substituted olive oil for the vegetable oil. Still, fabulous and sooo easy to make!

Pumpkin Cranberry Bread

A very moist and tasty bread. I substitute 2/3 cup natural style applesauce for the eggs and oil. Still comes out great.

Coconut Custard Pie III

Fantastic!! And sooo easy. I always find that I have too much filling for a deep 9" inch crust, though. Milk content should be reduced a little. I've even substited soy milk as an alternative, and although the color varied a little, it was still delicious.

Imitation Meatloaf

Very good. I modified it a little, used only a small onion, added a tbsp. of fresh garlic and added a ketchup/brown sugar glaze. The recipe was good, I'm definitely glad to have a veggie meatloaf option, but it needed the glaze.
