Whole Wheat, Oatmeal, and Banana Pancakes

Reviewed: Jun. 25, 2010
For a little less fat and cholesterol, try subbing the egg for 1 T flaxseed mixed with 3 T water.

Banana Pancakes I

Too much banana taste for us. For all that work we'd prefer banana bread.

Tasty Tuna Burgers

Reviewed: Mar. 8, 2009
Ours turned out fine. We think we cooked them with the heat too high, so they were not very firm and couldn't really bite into them. Make sure you make them thin enough or cook them long enough if you give this a try.

Mrs. Sigg's Snickerdoodles

Use an ice cream scoop for more uniformity. We think it needs more cinnamon than it calls for. Really good cookies!

Basil Tomato Soup

Reviewed: Dec. 21, 2008
Can use diced tomatoes if no crushed on hand by using a potato masher or even a fork. I made a half recipe (it makes plenty)and used 2 T butter, milk, and 2 t dried basil. The basil was very strong, but still good. This is a really good soup. I prefer mine thicker, but the cream probably would have helped that. Can add cornstarch to thicken a bit if desired. Next time I'll think about blending the diced tomatoes first to get the soup a little less chunky. A good tomato soup. Way better than the cans.

You can use normal oats if you don't have quick-cooking, just add a little more liquid.

Good Old Fashioned Pancakes

Reviewed: Dec. 15, 2008
If you're going to load your pancakes up with syrup or any other sugary thing, you really don't need to add the sugar to the recipe. It's still great without it.

Actually Delicious Turkey Burgers

Reviewed: Aug. 27, 2008
These are great! We made our own breadcrumbs by pulling a piece of bread into smaller bits and putting into an oven at 225. Only need 1 slice for 1/4 c. We had to use dry parsley, but they still turned out great. With fresh parsley I'm sure it has lots more flavor. We also added some cayenne pepper for a little more kick. We also didn't have eggs, so we used 1 T. milled flaxseed with 3 T. water and let sit 1-2 mins. They were still awesome. We're waiting for the rest of our patties to freeze right now!

Proper English Cottage Pie

Reviewed: May 26, 2008
The cinnamon definitely needs to be in there. When we made it you could smell that cinnamon, but when you ate it, it was just yumminess. Depending on how much extra onion/carrots you add, you may need larger than a pie plate, but ours fit perfectly into our nine inch pan. A great meal.

Cajun Seafood Pasta

This is so good! I made it a little different by using an alfredo packet for the sauce, but added in the same spices. It was really good, and cut down on having to buy cream, which I never have handy.

California Grilled Veggie Sandwich

This is a really refreshing meal. The only thing is that the lemon juice and mayo mix tasted a little weird to us. But, we'll put something else on it next time. A great idea.

Six Can Chicken Tortilla Soup

Reviewed: Oct. 17, 2007
First time I've ever had Tortilla Soup, so I have nothing to compare it to, but it was really good. I also followed the suggestions of one reviewer to add the cans of cream of chicken, no water, and it was really good that way. I doubled it (which was very easy) and now have lots of good leftovers. I think next time I make it I won't bother putting in any chicken though. There wasn't enough that I really noticed, and I think it'd be a great meatless meal. Already has protein from the beans anyway. Thanks!

Easy-Bake Cheddar Biscuits

Reviewed: Oct. 16, 2007
These are good and pretty easy. I recommend doing it in a kitchen-aid if you have one. Use the paddle, and then switch to the dough hook when you add the milk. No need to knead that way.
