Chicken and Spinach Ravioli
My first attempt at ravioli! The recipe was easy to follow and quite delicious... the filling had a wonderful flavor. I made a simple tomato sauce for these, and the combined dish had a very fresh taste. It was well-received.

Pumpkin Chocolate Chip Muffins
I could not have found this recipe at a more perfect time!! While on a VERY late-night baking spree to make muffins for selling at the farmer's market the next morning, I was browsing for a normal chocloate chip muffin recipe to try. Instead, I found this, and the idea of using pumpkin seemed perfect. Earlier in the day, a can of pumpkin had rolled from my cabinet as I put away groceries... an omen? The weather had been unseasonably cool here in Tennessee (in the 70s instead of in the 90s as it usually is in August), and it feels just like October. The thought of offering pumpkin muffins in the cool of the morning during the farmer's market was very appealing. And eating one warm from the oven was wonderful... perfect, even. I actually spoke aloud to myself (at 1:30 am, mind you), "Wow, these are terrific." The only change that I made was adding more spices, because I love the smell and taste of a very nutmeggy, cinnamony, clovey pumpkin product. I sold several at the market, and they did seem to appeal to those who also felt the tinge of autumn. In fact, I sold more pumpkin chocolate chip muffins than I did of the other two flavors, blueberry and apple-cinnamon. And as I gave the remaining two to my mother ans sister afterward, I could see their tangible joy at taking a bite of fall in August. Thanks for the great recipe!

Creamy Caramel Flan
This was my first flan, and was received very very well! I could not have been more pleased with its turnout... except I noticed that much of the caramel was left in the pan, hardened and stuck to the bottom, after the flan was chilled and inverted. That was probably my fault anyway, being a first time caramel sauce maker! But even so, it was wonderful. This flan was far better than my very first flan I had tried just nights before at our local (and usually delicious) Mexican restaurant... I can only describe what I had there as "eggy" and lumpy in texture. I thought as I ate it that I could probably do better myself, and this recipe certainly helped me achieve that! What I produced using this recipe was smooth and velvety, creamy and delicious. I used a variety of sizes of ramakins, from a 6 inch diameter for a "multiple person" flan to about 2.5 inches in diameter for wee little personal flans (adorable). All were easy to cook in the water bath, despite the size differences, and when I unveiled them by turning over the ramakins, I was amazed at what I had made! A truly wonderful recipe, whether "authentic" or not. I have nothing to compare it to besides my awful experience at the local restaurant, and the image I have in my mind of what it should taste like. And to me, this recipe yields a dessert which tastes like flan should taste!
