My favorite things to cook
I love to bake although I'm not particularly good at it yet. With a young son I am always looking for quick and easy recipes with a bit of a gourmet flair.
My favorite family cooking traditions
My mom used to always make pie and cookies at holidays and although I haven't necessarily established that habit myself as of yet, those memories remain some of my favorite.
My cooking triumphs
I think my best cooking triumph thus far has been when my sister-in-law asked me to make cookies for our family Christmas gathering. Specifically she asked if I could find a recipe for the cornflake cookies my husband's grandmother used to make. I found Evelyn's Cornflake Cookies on Allrecipes, and it continues to be a favorite even now.
My cooking tragedies
My latest cooking tragedy was in preparing a Crock Pot Chicken and Stuffing recipe for my family in which I forgot a tasty thickening ingredient and it turned out soupy and not as tasty as the last time I made it. It passed the taste test okay, but I was still a bit disappointed in myself.

Grandma's Gingerbread Pancakes
My son has a lot of allergies so I used a rice flour mix and flax seed as an egg substitute. I usually make buttermilk pancakes so I used 1 cup of soy milk for the water; it was rather thick so I added about another cup of water to thin it out. I admittedly (and a little ashamedly) forgot to add the molasses/brown sugar because making the substitutes distracted me, so my husband didn't enjoy it so much, but my son ate all on his plate, and that is a huge accomplishment, so I will definitely try these again. It's been difficult for us to find a bread-like product that my son will eat that is allergen-free, so finding this recipe has been such a blessing to us.

No Guilt Cheesecake
Not gonna lie...I was amazed how delicious this was. I had vanilla yogurt that I knew I couldn't eat completely before it went bad and was looking for a delicious recipe that was NOT another smoothie. I hit on this and decided to give it a shot and man, am I glad I did. I strained my yogurt for 48 hours. Great recipe. Thanks!

Perfect Pie Crust II
I have tried several pie crusts and tend to shy away from them because I have been so unsuccessful with them. This time I decided to try one more time to make a fruit pie for my husband. The fruit part did not turn out, but the crust was easy to work with and delicious, so I will be keeping this recipe to try again.
