Baked Ziti I

My hubby loves Italian food and wanted me to make baked ziti. I found this recipe and I am so glad I did! I used half ground beef and half hot Italian sausage, two jars of the Bertolli mushroom and garlic sauce, Sargento 6 cheese Italian shredded cheese, and added a few extra spices and fresh garlic. Per the suggestion of other reviewers, I mixed the pasta with the meat sauce before spreading it in the pan. This makes way too much for a 9x13 dish. I used a deep 4 quart baking dish. I baked the ziti for 40 minutes and then took the foil off and baked it for another five minutes or so. I know the sour cream sounds a little different, but don't leave it out. It made the ziti so creamy. Also, I would recommend using regular sour cream, not low fat. This is a very rich dish and can't be a regular week day dinner, but will definitely go into the recipe book. I am already looking forward to making it for my in laws.

Antojitos Minis

These are really good. I used a coffee cup to guide me as I cut the flour tortillas and this worked perfectly. I baked the tortilla shells for a few minutes prior to filling them with the mixture. I simplified them by adding only black beans, cheese, and chopped jalapenos to the tortillas as they baked. After they came out, hubby and I added guacamole, sour cream, and salsa to our liking. Hubby loved them and has asked for them several times since I first made them.

Cha Cha's White Chicken Chili

I usually make my Mom's recipe for white chicken chili, but have always found it too much like a soup, rather than a chili. Tried Cha Cha's last night and it was fantastic! Maybe it's not quite as thick as chili, but it's really close. I put in 2 1/2 cans of navy beans and then smashed up the other 1/2 can, which helped to thicken it. Also, I used 2-3 teaspoons of the jalapenos and green chilis, rather than the amount called for. In addition, rather than chicken broth, I used store-bought chicken stock. I also cooked it for an hour, rather than the time called for. When it was done, I spooned it in individual bowls and hubby and I added cheese and sour cream to our liking. This was fantastic, only takes one pot to make, and will definitely be made again in our house!

Chocolate Mint Cookies I

These were very easy to make. I ended up with 100+ cookies out of one batch of dough. The suggestion to use a mellon baller definitely helped. I used Andes mints and did not add peppermint extract to the dough. I would have given them four stars, but I took them to Christmas dinner yesterday and everyone loved them. Two people asked for the recipe, so I bumped it up to five stars.

Mock Champagne

I made this for a bridal shower a few months ago and it turned out great. Everyone loved it. Instead of the ice ring, I froze raspberries in ginger ale in ice cube trays. I'm making it again for a baby shower next month.

Easy Meatloaf

My fiance did not like meatloaf growing up, so when I first made this for him, I was nervous. He looked at it with skepticism, but to my surprise and his, he loved it! It's now one of his most requested meals. I have changed the recipe a tiny bit. I add more seasonings, including worcestishire sauce, and I bake it for an extra 30 minutes. When I only baked it for an hour, it wasn't even close to being done.

Dill Wrapped Cream Cheese

Yum, yum, yum! Ever since finding this recipe, I have made it every time I have people over. If you have any left, put it in the refrigerator and it's pretty good to snack on the next day. I have made this two ways. The first way, I have made it exactly as described on the site, except I add lots of extra dill, since it's my favorite herb. The second way I've made it is to mix the cream cheese and dill together and then spread inside each individual crescent roll, roll them up, and bake as directed.

Pizza Pinwheels

My boyfriend's mother makes these and he loves them. I tried to copy the way she makes them, but they didn't turn out very well. Low and behold I find this version of pinwheels and they now turn out perfect! We don't use the pizza sauce, but other than that, I follow the recipe exactly. Be sure to take the advice of other reviewers and put the dough in the freezer for about 15 minutes before using. It makes it so much easier to handle. Thank you Christi for helping me to recreate my boyfriend's favorite snack!

Butter Pecan Bars

I'm not sure what I did wrong here. I followed the recipe exactly. The bars were way too thick and never got completely done, even after cooking them 10+ extra minutes. The recipe sounded great and I really wanted the bars to work out, so I made a second batch and they turned out the same as the first batch. They definitely need to be in a bigger pan than 8x8. I was preparing the bars to take to a party. Even though I wasn't happy with the results, I took them anyway. They didn't turn out pretty, so it was hard to get people to try them. Those that did try them, said they liked them, but there were a lot left over.

Buffalo Chicken Dip

I took the advise of other reviewers. I boiled and shredded chicken breasts, used blue cheese, ommitted the cheddar cheese, and used Frank's buffalo wing sauce. I also didn't pay attention to the measurements. I just kept adding ingredients until I got the taste and consistency I wanted. I have made it twice. First time I started it on the stove and then put it in a baking dish and baked for a few minutes before serving. Second time I cooked it on the stove and then took it to work in a crock pot and heated it up. It was extremely greasy. I wil definitely make it again, because everyone loved it, but will only make it when I can put it in the oven. I would not recommend using a crock pot.

A Good Easy Garlic Chicken

Loved the basic concept and then took some ideas from the other reviews. I used olive oil, rather than butter. Tossed in a big handful of chopped onion and a few teaspoons of already minced garlic from a jar while the chicken sauted. After the chicken breasts were done, put in a can of chicken broth and let everything simmer while I finished the rest of the meal. When the meal was ready, removed the chicken and made gravy out of what was left in the pan. It was delicious and has become my favorite way to cook chicken.
