Valentino's Pizza Crust

Reviewed: Nov. 21, 2005
Really good pizza crust. I followed recipe exactly and didn't feel the dough was too sticky to handle at all. I added garlic powder to the crust and divided the crust to make two thin crust pizzas. I don't have a pizza stone so I just used a regular cookie sheet, greased just a little with some shortening. I topped with canned pizza sauce, mozz and chedder cheese and some dried basil. The kids loved it and so did I. A nice quick meal and something you can do a lot with. On the second pizza, after I took it out of the oven, I took it off the cookie sheet and put it back in the oven for a few minutes to really crisp up the crust. Will definitely make again! Thanks!

Tomato Chicken Parmesan

Reviewed: Oct. 24, 2005
Perfect! I used provolone because that's what I had on hand, but I think any cheese would work. Just like another reviewer mentioned, the sauce tastes wonderful with the chicken flavor in it. I would probably use Italian bread crumbs next time for more flavor. I did add garlic powder as someone suggested. I'll be making this a lot! Thanks!

Iced Pumpkin Cookies

Wonderful! Couldn't be more easy. I followed recipe exactly and turned out great. The kids like them with or without frosting, and the smell while they are baking is fabulous! Great for fall. Thank you!

Vegetable Cheese Soup I

Reviewed: Sep. 17, 2005
This was fabulous! I really wasn't expecting it to be as good as it was. I have had cheese soups in restaurants, and have always wanted to find that great recipe to make at home, but am always disappointed. I would say this is it! Here are the slight changes I made: 1 can of vegetable broth, double the potatoes, used the Kroger brand jar of processed cheese, added 1 clove minced garlic and I made it on the stovetop. (Since I made it on the stovetop, I sauteed the veggies in a little butter before adding the broth)Oh, I like others, added the creamed corn when I added the cheese. Excellent, thank you!

Monster Cookies VI

Reviewed: Sep. 8, 2005
Super easy, absolutely great crispy on the outside, chewy on the inside cookie. I followed exactly like the recipe except didn't use the corn syrup, didn't have any. Turned out great! Not sure what the benefit of using the corn syrup would be. I highly recommend this as a tasty, semi-nutritious snack for your kids. My kids loved them! Thanks!

Cheeseburger Vegetable Soup

Reviewed: Apr. 26, 2005
I loved this soup. I made some changes based on what I had on hand. I substituted the can of mixed veggies with a can of rinsed and drained black beans. I added a clove of chopped garlic, deleted the celery and added twice the carrot. I used a can of papper jack cheese soup rather than chedder cheese soup. I also added about a tsp of chili powder because I think it needed a little extra kick. Great recipe and I will make it again! Thanks!

Three Cheese Garlic Scalloped Potatoes

Reviewed: Feb. 16, 2005
This was great! I did change it a little, based on the ingredients I had on hand. I layered grated cheddar cheese and swiss between the layers. Instead of garlic slices, I just sprinkled a little garlic powder between the layers. I also chopped up a couple of tablespoons of onion and layered them in. Instead of cream I used milk with about 3 heaping tablespoons of flour mixed into it, then poured it over the top of the potatoes. I also added grated cheddar cheese to the top the last 30 minutes of cooking. Great recipe and will definitely be a keeper in my house! Thanks!

Scalloped Potatoes II

Reviewed: Feb. 16, 2005
I would say this recipe is only a 3 star, as written, but it is a great base recipe. I actually combined this recipe with another one on this site and they turned out great. For me, this recipe is a little bland. I added a little grated cheddar cheese between the layers along with salt, pepper and garlic powder. I also topped it for the last 30 minutes of cooking with more cheddar. I mixed my flour with the milk to prevent lumps. Great recipe to play around with!

Beef and Biscuit

Reviewed: Jan. 27, 2005
Really good comfort food. I used some chopped up red bell pepper instead of the green chili because that's what I had. I used cheddar cheese. I, like others, had to add extra spice, about 1 12/ tablespoons chili powder and a few drops of hot sauce, to jazz it up a bit. It was great and will definitely be a common meal in our house. Kind of a twist on the sloppy joe!

Hailey's Smoothie

Reviewed: Jan. 27, 2005
I loved this recipe and am planning on making it a lot. I didn't use kiwi though, don't like it. Used unfrozen bananas, frozen blueberries, vanilla yogurt, honey and vanilla extract. This is what I had on hand. I didn't use ice because of the frozen blueberries. Excellent, nice and thick, really cold and refreshing. I am going to try it next with mixed berries in place of the blueberries for something different. Thanks a lot for this great drink!

French Bread Rolls to Die For

Reviewed: Dec. 28, 2004
These rolls were fine until I went to try to get the damp cloth off of them, after I had made them into balls and let them rise the 40 minutes. I couldn't get it off without completely deflating the rolls and taking some of the dough off with the cloth. I ended up having to throw the whole mess away. I used more flour like other reviewers suggested. I used paper towels, damp, not dry, rather than a damp cloth because I was afraid that the weight of the cloth (being damp and more heavy) would prevent the rolls from rising the second time. Maybe that was the problem. I even tried getting the towel wet before I removed it, like one reviewer said helped her get it off the rolls. I may try this recipe again, not sure. I think the end product would have been great, but not sure how to get there. I guess I'll try it once more and this time use a cloth rather than paper towels that were damp.

Smushed Apples and Sweet Potatoes

Reviewed: Nov. 28, 2004
This ia a fabulous recipe and really easy. It tastes nothing like apple pie though. In fact, I couldn't even taste the apple. I used another tart apple because I didn't have a granny smith on hand. I think maybe I'll use more apples next time. I used half white sugar and half brown sugar for the sugar the recipe asks for. I think the brown sugar is better with the sweet potatoes than all white. Definitely a keeper! Thanks!

Flourless Chocolate Cake I

Reviewed: Nov. 28, 2004
This is a great recipe. I used a package and 1/3 of semi sweet chocolate chips because that's what I had on hand. I don't think it needs any sort of topping at all, it is so rich and sweet. Definitely a dessert for a crowd because of this. I'll make it again. It is like something you would get in a restaurant.

Spiced Pumpkin Seeds

Reviewed: Nov. 16, 2004
These were good. I would make them again. But like the other reviews suggest, you need to double or triple the amount of spice/sauce for it to really be tasty.

Spicy Slow Cooker Black Bean Soup

Reviewed: Nov. 16, 2004
This was a great soup. I will definitely make this again. I didn't use dry beans though, used 3 cans of black beans. I also didn't use the 6 cups of chicken broth. I used 3 14 oz cans and it still was very watery. After I blended some of the soup with my hand mixer, it thickened up just enough. I didn't add the jalapeno pepper or the cayenne, just some red pepper flakes. I didn't have any hot pepper sauce so I added a 2 tablespoons of medium salsa. I chopped up some onion and added also. Love it! Thanks!

Snickerdoodles V

Reviewed: Oct. 18, 2004
Excellent! I used 3/4 c butter flavored Crisco and 1/4 c country crock margarine because I was craving something sweet and that's all I had on hand! I also added 1 tsp vanilla when I was mixing in the eggs. The cookies turned out great. They were flatter, probably because of the margarine, but tasted fabulous. I will definitely be keeping this in my favorite cookie recipes! Thanks!

Stuffed Pork Chops III

Reviewed: Aug. 5, 2004
My husband and I really didn't care for this recipe. We thought it was bland and the stuffing part was dry. I think that the pork chops need some marinade or something before you stuff them. I just used some black pepper and garlic powder and they were still a little bland, but still much better than the stuffing part. We ate the pork chops and didn't eat the stuffing. I think we just prefer something with a little more moisture and flavor. I did follow the recipe as written, didn't really have any "sauce" left after cooking. Maybe if you doubled up on the broth that would help. We won't use this recipe again.

Cream Cheese Pound Cake I

Reviewed: Feb. 21, 2004
I thought this was excellent. I made it in a dark nonstick bundt cake pan and it cooked in just the amount of time the recipe calls for at 325. I substituted all purpose flour for the cake flour (for each cup of cake flour, substitute 1 cup all purpose MINUS 2 tablespoons) and used 2 tablespoons vanilla extract no almond extract. I used 1 cup butter flavor Crisco shortening and 1/2 cup Country Crock because I didn't have any butter. It turned out dense and moist and just perfect. I will definitely make this one again.
