Apple Squares

Sweet and delicious. I doubled the amount of apple (seemed like a "must" after reading some reviews), used toasted walnuts, only used 1/2 C of white sugar (and some more to sprinkle at the end), and used half applesauce+half butter. I just mixed 1 full teaspoon of cinnamon to the batter and skipped sprinkling part. The end result is sweet enough (at least for me and my family) and delicious. I might try adding dried cranberries or raisin next time.

Mamon (Sponge Cakes)

Had I read the top review more carefully, I wouldn't have my mamon come out so dry. The taste was good, but after 35 min of baking, it came out very dry. As long as you watch the time carefully, it should be very delicious. I would definitely try again.

Double Chocolate Cherry Muffins

Very good, but I think mine turned out more of a cupcake than muffin. Few changes I made: First I halved the recipe so that I can make 12, not 24 regular sized muffins. I didn't have sour cream so used milk+vinegar. Instead of milk, I used coffee to bring out chocolate flavour more. Decreased the flour by few TBSP's and added more cocoa powder by few TBSP's. Used half oil half applesauce. As for cherries, mine weren't all that sweet (quite bland in fact), so I soaked them in red wine+sugar (about two TBSP?) while I prepare other ingredients. Also added tid bit more baking soda than called for. Also added 1t of vanilla (probably didn't make too mcuh difference though). The result was absolutely delicious! Moist and very chocolately with yummy cherries inside! (And tastes much better the next day) I will definitely try again with sourcream. Thx for sharing the recipe!

Gramma's Apple Bread Pudding

I had some pears to use up and I couldn't find any "pear bread pudding" recipe that I liked. So I decided to go with this except use pear for apple. I followed the recipe exactly while using left-over whole wheat sliced breads and adding 1t of brandy extract and handful of toasted, chopped walnuts. Used light cream instead of milk and sprinkled ground ginger on top along with some honey before putting in oven. It did take longer than stated time here, but that might be because I placed about a cup of water underneath the baking dish. Didn't make the sauce, but it was still delicious. Next time I will try with apples!

Pastel de Tres Leches (Three Milk Cake)

Absolutely delicious! I've been itching to make this for some time and I am SO GLAD I made this! I know there were other recipes of this "three milk cake", and glad to pick this as well. I did few things differently: I whipped the egg whites and the other ingredients separately and at the end added the yolk+flour mixture into stiff egg white mixture (half the sugar amount was dissolved in the egg whites and the other half was in the yolk mixture). I also cut the sugar by half since I know sweetened condensed milk would be very sweet. (My family likes not-too-sweet desserts.) Also, instead of using heavy cream for the three milk mixture, I used light cream (5%) and to us it still tastes awesome with less calories. Lastly, I left the cake sit with milk mixture overnight so that it gives more time for the cake to absorb the milk mixture. Served with blueberries instead of strawberries and PERFECT! Next time I will try with coconut milk like others have suggested. I will definitely make these again and again!

Guacamole

I made this the night before and covered tight with wrap (after coating the wrap that will touch the guac with light olive oil). I think it tasted better the next day and it didn't even turn brown! I will use this recipe again.

To Die For Blueberry Muffins

Very good muffins. I used 1/4C of applesauce and about 1T of oil and mix of ap and ww flour. As I was mixing the wet ingredient to the dry, I thought the batter was too thick, so I ended up adding about 2T more milk and about 1/4C of fat-free vanilla yogurt to make it thinner. To be honest I was a little concerned that it would ruin the whole recipe.. but I am glad I added them! Muffins are soft, moist, and most importantly yummy! I know the top reviewer said no need to add vanilla, but I did add about 1t anyway. As for the topping, I added mix of flour and oats, and oil and butter (makes the topping more crunchy). Make perfect 12 regular-sized muffins. They rose beautifully, too! I would use this recipe again. *** Edit: I made them again with strawberries+blueberries and added some fruitopia juice (berry flavour) to make the batter thinner. Still added 2t of vanilla. Delicious!!!

Orange Spice Cake

Not too sweet and quite spicy. I put pinch of nutmeg and all spice, so I think it came out spicier than the original cake. I replaced oil with apple sauce, and used ww flour instead of ap. Because I am so lazy I just blended one whole orange to get juice (minus the peel of course), and added orange zest to the liquid mix. I baked them in a regular sized muffin pan and got 12 cupcakes. To me it seems like the cake tastes much better the next day. (Just had one with coffee as a morning snack.) :) Very quick and easy cake! I would make it again.

Banana Crepes

First time I tried as is and it was good. I had to wait longer for it to be "done". Second time I just added couple tablespoon of water for 'lighter" crepes and cooked in a little bit shorter time. Also added 1/4 teaspoon of almond extract and filled the crepes with banana, cream cheese, and homemade "nutella" (hazelnut butter+cocoa+honey+shredded coconut heated up and sit for a while). I will continue to use this crepe as my base. YUM!

Whole Grain Loaf

Tastes awesome. This being my first yeast bread recipe, I don't know where I went wrong but my bread didn't rise much at all and came out very dense. I used more ww flour than ap flour, so maybe that's why? Don't know but I am definitely trying again because this tastes awesome even on the 2nd day (chewing on the few last bits). Oh and I added some sunflower seeds and pumpkin seeds.. Much better than "freshly baked" store-bought bread.

Cottage Cheese, Avocado, and Black Bean Salsa

Quick and awesome. I added some hot sauce because my salsa was just "mild". Very healthy alternatives to putting mayo. Next time I will two two avocados just because my family is a huge avocado fan.

Oatmeal Date Bars

Pretty good considering how little butter goes in these squares. On top of that for the crust I've used half applesauce half butter and only 1/2C of sugar, and added 1/2C of coconut (next time I will put 1C since I can't really taste the coconut at all). I also added orange zest + juice to the date mixture (omitted sugar). Before I put it in the oven I sprinkled some cinnamon on top but still a little bland. And I will definitely use more than 1 C of dates next time since I want there to be more filling.. :-) If you are willing to sacrifice the texture and all that buttery taste for your health(I AM!), this is the right recipe for you! Oh, and I used the entire egg (too lazy to separate) and the crust wasn't dry AT ALL. The taste is much better the next day!

Chef John's Scones

I know others didn't like the fact that these weren't so sweet, but that's the part I like about these. The only problem I had was the dough was waaaay too sticky to work with. I didn't watch the video before I made this (which I should have..then I wouldn't have dipped my hand like I did trying to form a "ball" like I do for other scones/biscuits). It was IMPOSSIBLE to get them off my hands without water!!! So I just had to drop spoonful of dough onto a bakings sheet. I tried to "knead", but of course I couldn't even do that.. :( And to make the situation even worse, I had put some blueberries to the dough, and you can imagine how purple the dough must have turned out! BEYOND messy I tell ya... Because it was so messy I coudn't even do the egg wash. So my purple "scones" with butter chunks tasted OK, but nothing too spectacular. Now that I watched the video and got a hang of how to handle the sticky mess better, I will try again with some dried current or something.

Black Bean Brownies

Seriously, everyone who cares about their health MUST try this. Reading all the comments, I used 4T of unsweetened applesauce, 1/3C sugar, 2T honey, 1 tsp of baking powder, 1/2C of cocoa, about 1/3 of chopped walnuts. Try not to omit the coffee since it brings out the flavour. (We like our brownies with strong cocoa flavour and not as sweet.) They turned out so delicious and quite "fudgey"! Served with frozen raspberries and I'm sure fresh whipped cream would have made it a lot better. With or without the toppings I would still enjoy, and I am definitely making them again and again. If I really want to indulge, I would add chocolate chips (I omitted the chips because I wanted to see how it would turn out to be). Oh and I had to bake at least 10 minutes more than stated but that might be because I added extra cocoa and additional honey for part of sugar. Just keep checking until your tester comes out clean.

Beat and Bake Orange Cake

Tasty cake. After reading the reviews, I used sour cream isntead of milk and the cake wasn't dry at all. Also used whole orange zest and bit more fresh orange juice than called for. Otherwise followed the recipe exactly and used orange glaze rather than the regular icing. Though probably not often, I would make this again.

Cilantro-Lime Dressing

It had very interesting taste (in a good way of course). I didn't remove the seeds from the pepper because I love spicy food. I used ground ginger and didn't measure out the ingredients (just dumped them all in my blender), so mine turned out a little bit thick (less honey and oil, more lime juice, vinegar, and cilantro). I had this dressing with salad (black bean, corn, lettuce, tomato, avocado, red onion), but I think it will make a really good sauce for grilled chicken main dish. (I will try with my leftover dressing!) ***Edit: So with leftover dressing I made cilantro-lime chicken sandwich. Basically mix what you would use in salad (tomatos, avocado, red onion, black bean, etc) with the dressing and bit of mayo and add shredded/chopped chicken breast. Mix well until well coated. Toast 2 pcs of bread and put shredded cheese (I used cheddar) on both right away so it melts a little and put the sandwich filling in between the pcs of bread. Very yummy and my brother asked for a second! Freeze the leftover dressing so you can make this quick sandwich!

Heavenly Angel Food Cake

My first angel food cake from scratch and I couldn't have been more satisfied! (given it was literally my first atempt to separate and beat 9 whole eggs) I used less sugar for both flour and egg white mixture and it still tasted "heavenly" enough. I cut half of the cake in slices and stacked them with white chocolate vanilla "filling" (blended melted white chocolate, milk, vanilla instant pudding mix, and ricotta cheese [because I ran out of cream cheese]) and strawberries/blueberries (that was all I had in hand). Not only was it so pretty to look at, but tasted amazing!!! I even added a photo! :-) I probably won't bother finding another angel food cake when I have this wonderful recipe! Thank you for sharing!

Mine came out a little bit dry, but that's because I used less butter and also mixed with apple sauce. But it was still delicious! Used 9" square pan and they only lasted 1 day. I added no extra sugar for the date mixture and added 1 t of vanilla. I will try again with orange zest, etc.
