This was great! A tip: use rice milk instead of cream (you'll never know the difference) and heat it before adding it in. It will combine better and won't drop the temperature of the potatoes!

Banana Sour Cream Bread

This was amazing! I'm not much of a baker but this was incredibly easy (especially since I did the whole thing in my food processor). It makes a perfect breakfast or snack. I ran out of AP Flour while making it so substituted 1 cup WW flour and you can't taste the difference. Instead of making 4 loaves, I baked it for 1 hour in a 9x13-inch pyrex. Delicious!

Refried Beans Without the Refry

I really thought these were perfect. I was concerned about cooking them for 8 hours on high but they were phenomenal. I soaked the beans overnight with a piece of kombu before cooking them (and cooked the kombu in with them). I also upped the garlic to 15 cloves and used garlic parsley salt instead of plain. Yum!

Baked Bluefish

This was wonderful! I'm gluten-free, so I substituted thinly sliced potatoes for the stuffing mix and they were almost as good as the fish! I also only cooked the fish for 30 minutes total (20 minutes @ 400F).

Stuffed Artichoke Hearts

I love stuffing artichoke bottoms (much easier than hearts)! These were a bit rich for my taste so I added changed the filling around, using anchovies (though soy sauce would be great too!), fresh garlic and fresh lemon juice and zest. Yum!
