Banana Sour Cream Bread

Reviewed: Feb. 23, 2012
This was amazing! I'm not much of a baker but this was incredibly easy (especially since I did the whole thing in my food processor). It makes a perfect breakfast or snack. I ran out of AP Flour while making it so substituted 1 cup WW flour and you can't taste the difference. Instead of making 4 loaves, I baked it for 1 hour in a 9x13-inch pyrex. Delicious!

This is a fantastic menu! I especially love that it's not filled with "meat substitutes".

Beer-Baked Irish Beef

Reviewed: Mar. 8, 2012
I love using the slow cooker although, obviously, I prefer fewer dishes. I may try and find a way to make this without browning everything first. Any suggestions? Or is the browning really necessary for the delicious-factor? Also thinking of doing liquid smoke instead of the bacon and vegan "crumbles" for the beef.

Tomato Pork Loin Chops

Reviewed: Mar. 13, 2012
What a great sauce! I'd make it with tempeh or TVP instead of the Pork Chops.

How wonderful! I could even see making this as a vegetarian main course, accompanied by just a salad.

Slow Cooker Enchiladas

Reviewed: Apr. 23, 2012
I never thought of making enchiladas in the slow cooker! I'd substitute crumbled veggie burgers for the ground beef, though!

For a vegetarian option, use breaded tofu instead of the halibut.

I love remembering family members through their recipes. If your grandfather was anything like this carrot cake ... I'm sorry I never crossed his path!

Stuffed Artichoke Hearts

Reviewed: May 5, 2012
I love stuffing artichoke bottoms (much easier than hearts)! These were a bit rich for my taste so I added changed the filling around, using anchovies (though soy sauce would be great too!), fresh garlic and fresh lemon juice and zest. Yum!

Adrienne's Cucumber Salad

Reviewed: Jul. 29, 2012
This was very easy to make and a very good side dish. I used about 15 drops of stevia instead of the sugar to keep it sugar-free!

Baked Bluefish

Reviewed: Aug. 19, 2012
This was wonderful! I'm gluten-free, so I substituted thinly sliced potatoes for the stuffing mix and they were almost as good as the fish! I also only cooked the fish for 30 minutes total (20 minutes @ 400F).

Peas with Mushrooms

Reviewed: Nov. 19, 2012
This was good if a little mild. I added some allspice, used olive oil instead of butter and eliminated the sugar. Next time I'd up the spices and maybe add some soy sauce as well. We had it over mujaddarah -- rice with lentils.
