Sweet Basil and Oregano Bruschetta Chicken

This was absolutely delicious! It's a nice change from spaghetti and meatballs. I used Cento brand peeled plum tomatoes because I had no fresh tomatoes on hand. After I laid out the cut tomatoes I poured the rest of the sauce from the can around the edges because I was making a 12oz box of whole wheat spaghetti and figured I'd need the extra juices. It's SO easy. I'll be making this one again.

Chicken a la King I

Very good recipe. I haven't made chicken ala king in years and was looking for a refresher course. I used a 10oz bag of frozen peas and mushrooms (in place of the red pepper) and 1 can of mushroom stems and pieces. I cut the butter down to 6T (not much, I know, but 1/2 c just seemed like too much). I stirred 1 pod of condensed chicken stock into the hot water instead of bullion. I served over pastry puffs. de-LISH!

Orange Ginger Shrimp Stir-Fry

I just happened to have some fresh ginger and garlic and shrimp was on sale so I thought I'd try this fresh seasoned stir-fry instead of using a pre-fab sauce. I always mix Udon noodles into my stir fry and was worried that it wouldn't be saucy enough but surprise, it blended in perfectly. I used broccoli, carrots and snow peas for my veggies. I'll make this again. Thanks for the great recipe!

Kids Favorite Meatloaf

I found this recipe in a cookbook from the back of bottles, jars, and cans. I've been making it for years and everyone raves about it. I've always molded it in a regular loaf, though. Too bad I didn't think of the kiddie loaves when my adult children were small.

Romano Chicken

My family asked two questions when I served this dish. 1)Why haven't we had this before? and 2)Will we be having this again? This is "dinner party" in taste and appearance but so simple and fast you can make it anytime with minimum effort. ***FYI, I also found that 4 minutes in my (very powerful) microwave was insufficint, go with 10 minutes*** This is a keeper!

Chicken Saltimbocca

Served this at a dinner party and it was a hit. I used procuitto instead of ham, however. I also removed the chicken from the pan and put it on a meat platter and then put on provolone slices and placed in a warm oven for a FEW minutes to melt. I put the pan juices (mostly butter) in a gravy bowl for reserve sauce but no one used it.

Awesome Broccoli-Cheese Casserole

Easy to make and good flavor. I used fresh broccoli so the finished dish was a little too firm for my family. I'll use the frozen next time or steam the fresh broccoli first.

Angel's Old Fashioned Beef Stew

Good flavor and just as easy as using a store bought stew seasoning package. I like the option of adjusting the thickness of the sauce near the end of cooking because I sometimes want a thinner sauce to serve over noodles. Also, using pearl onions is great because it's easy to make sure that my anti-onion daughter doesn't get any in her serving. The whole family rated this recipe an A+

Melt - In - Your - Mouth Shortbread

5 stars because it is incredibly easy to mix and the finished flavor is excellent. My son ate one and actually said "Mom, this cookie melts in your mouth". I will make them again. I used a cookie press but the only slate that worked well with the dough was the simple round. That may just be because I have a manual press, though. Good cookie!
