Pineapple Zucchini Muffins

made these for back to school tomorrow morning. Followed others reviews and halfed the oil and added applesauce. Will make them again with half brown/half cane sugar. VERY sugary. but very tasty...the kids will gobble them up.

Meaty Spaghetti Sauce

very small changes...no red meat only turkey and chicken broth in stead of beef! My kids go crazy for this...they eat it by the spoon full.

Easy A La King Biscuit Casserole

added all fresh veggies (green bean, mushroom, carrot, broccoli) and some spice(celery seed, pepper, salt, cayenne). My family gobbles up every bit of this dish and the little one likes to help make it! Perfect for cold winter nights

Chi Chi's Corn Cake

Dinner party went crazy for this. Served with shredded chicken tortilla soup and a fantastic cilantro southwest salad a friend brought. Delish. Found the Masa Harina. Cooked it in the suggested roasting pan, A MUST. So moist. More like dessert. Didn't change a thing.

Zucchini Pasta II

delicious flavor...only major change was omitting the red pepper flakes(7 year old is not a fan) but added them as a garnish to others plates. Used tofutti and whole wheat pasta...good taste and good for you!

Garlic Chicken Stir Fry

very tasty...added mushroom, carrot, extra snap peas...doubled the sauce as recommended. Kids and husband were happy. One dowside, my hubby and I like more spice in our stir fry. Will make this again for sure. Thanks

Roasted Brussels Sprouts

I have ALWAYS steamed my brussel sprouts, but tried this and loved it. Added fresh minced garlic and cut the roasting time. Perfect compliment to salmon! yum

Grilled Salmon I

Such a compliment to salmon. Slightly cut back on all the ingredients and used low sodium soy. Used the foil packs suggestion and the fish was cooked to perfection! Juice and flaky and very tasty. I was very generous with the lemon pepper and garlic powder.

Turkey Meatloaf and Gravy

awesome flavor...on advice of others, less one egg, more garlic. Made an organic packet gravy, ran out of time. Kiddos ate it for dinner, lunch and dinner the next day.

Sesame Shrimp Stir-Fry

Super Yummy. Tamed it down a bit for little ones, but added red pepper flakes for the hubby. Used brown rice. Also didn’t like the dry marinade so added just a touch of teriyaki and fresh lime juice as suggested by someone else. Wanted a heartier meal so added chicken at first and shrimp later after the chicken had some time to cook. Excellent flavor and filling! Will make again most definitely.

Absolute Mexican Cornbread

Cutting the sugar and butter are essential. Thanks for that. Also used the jiffy, thanks for that too. Made this with tortilla soup for a holiday dinner and everyone loved it.

Strawberry Oat Muffins

Very tasty. Whole family loved them. Like others suggested,used wheat flour, added cornstarsh, used 1/4 unsweeted natural applesauce with a bit of cinnamon, and added two handfuls of organic chocolate chips. Great alternative for preschoolers birthday cupcakes. Thanks for the beginning of a very yummy muffin recipe.

Chicken Tortilla Soup I

Have made many tortilla soups, this one is super tasty. Boiled my chicken and used the water along with chicken broth. Added cumin and extra garlic. topped with no-fat sourcream and black bean tortilla chips and fresh avocado slices for a little healthier alternative. This is a keeper!

Taco Casserole

added lots of extras, corn, black beans, little bit of minced garlic and green chilis. I substituted ground beef for lean turkey. Topped with sliced avocado, sour cream, celantro and black olives. Husband ate two servings, and even the kids enjoyed.

Mini Meatloaves

Whole family gobbled them up. Kids loved their own little loaf. Added onion, carrot, celery and garlic (small amounts of each) for flavor and to get veggies in the meal. Will make again for certain.
